The Chilli Chicken available in Calcutta in the 1960's and 70's bears no resemblance to present day presentations. It was made from small bone country chicken and was served dry with green chili toppings. It was extremely dark in colour and no batter was used. Present day fare is no match to Nanking version (my favourite Chinese destination once upon a time). Incidentally, it was not only served by Nanking. It was served wherever alcohol was served in Chinese restaurants and was treated as starters by many. You are a genius. Unearth the original recipe (I have a Bengali version) and make it. I have not forgotten it's taste even after 40 years.

But like many things, the advent of Broiler chickens and the efficiencies introduced in kitchens killed original chili chicken and a whole host of other dishes.
I watched hundreds of cooking videos of chicken chill and chill mushrooms dry. I learnt only from this video how to prepare chill chicken and my daughter loved it for the first time! Thank you!!

You may use lightly cooked broccoli and cauliflower in place of chicken. It tastes better. 😁 They don't know it. 😆 Whoever eats will be surprised, when they alternatively keep getting one Broccoli and one cauliflower. The Japanese people cook tempura in the same way. Chicken is not really mandatory here. And there are many veggies that taste better than those broiler chickens.
