No, it isn't. I've worked as a cook long enough to understand that this is very doable. Just make sure your knife is sharp enough and roll with it. Try it out. You don't need a knife like the guy in the video has, just a regular chefs knife, preferably a bit thinner, is perfect. You can do this! Now go out to the store, buy the ingredients and make this.

      Hi there,
If you do not mind me sharing; a well-planned, organic, unrefined and untempered with vegan diet (consuming raw plant foods where possible so as not to denature or destroy the life-forces and enzymatic activities beneficial to the human system. If disagreeing on this matter, please take some steamed carrots, plant them and see if they will grow; if not, it is because they are 'dead' plant food that cannot benefit one's 'living' cells) consisting of organic fruits, vegetables, legumes, nuts, seeds and whole grains is the best diet to provide mankind with ultimate health and longevity.
Regarding the whole protein concern for vegans is exaggerated from gathered information especially that there are 'high protein' plant food sources e.g nuts and legumes; People showing signs of deficiencies e.g those showing signs of anorexia, actually need plant food sources such as starchy carbohydrates that help with weight gain than protein.
I highly encourage being a sceptic, research things for yourself, and you will find out that the diet shared with you is actually for your own good (even if it means making small changes here and there, i would encourage) e.g processed meats are classified as carcinogenic to humans in Group 1, which is as bad as it can get, where as plant foods are classified as anti-cancer foods.
Please avoid factory produced meat alternatives whose chief ingredient can be 'soy' and may contain preservatives as well as additives (e.g vinegar, a corrosive agent). Food toxicity and nutrient deficiency (e.g white bread, white rice and white sugar) are a deadly combination as one is hindering the body's building materials needed to action healing whilst at the same time taxing the system with more toxic stuff, thus bringing about disease and possibly even an early death.

Chef! Thanks SO much for this video. This is one of my favorite dishes. I haven't had it in a long time because most places I get that don't make it right. But after I watched your video, I was like, wow, I can do that. The first time I did it, it was good except it should have been a little sweeter. I made it again the next day and it was superb! My other favorite Chinese dish is the General Tso chicken. I saw your recipe for that. I was like, wow, he makes it look so simple. I can do that! That's my project for the next weekend. So again, thank you so much. You are a great chef!!!!

For what it's worth, you can achieve the same thing by using a vegetable peeler. You won't get the long picturesque strands, but the flavor will be the same.
Chefs mostly do it like this because they'd rather have mastery and efficiency with a small range of versatile tools, than be fumbling with a thousand different specialized tools and not have nearly as much experience with any of them. If you have a fire and a reliable cleaver, you can cook almost anything.

From someone who actually made the lemon chicken recipe: it's the best lemon chicken I've ever had, and it wasn't that hard to make! For the lemon peel, the trick is to use a really sharp knife and keep your palm open so you don't hurt yourself, and go slowly but confidently. Avoid excess sawing motions, and try to just scrape layers a little at a time until you're at the yellow peel. It's worth the patience!

But people shouldn't be put off from trying what is actually a very simple recipe just because they don't have the godlike knife skills to attempt one very showy part that does almost nothing to change the finished flavour.
