    BEET GREENS & KALE SALAD

    Cook Time: 0 minutes
    Total Time; 15 minutes

    1 cup Kale, fine chopped
    ½ cup Beet greens, fine chopped
    ½ light green lettuce , rough chopped
    ⅔ cup of Red grapes, halves
    ⅓ cup Jicama root, julienned
    ⅓ cup Cashews, chopped & divided
    ¼ cup Cojita cheese, crumbled and divided
    Toss together all ingredients except for cashews and cheese. (Mix will keep in refrigerator for up to 2 days.)
    When serving the salad, combine ½ of cashews and cheese to the salad mix.
    Toss with dressing and garnish with cashews and cheese.
    Serve immediately.
    CITRUS YOGURT DRESSING
    Prep Time: 5 minutes
    Cook Time: 0 minutes
    Total Time; 5 minutes
    Servings: 12 (up to 1 tablespoon per serving)

    1/4 c. plain greek yogurt (low-fat)
    Zest and juice of ½ lemon
    Zest and juice of ½ lime
    1 small Garlic clove, minced
    2 tsp. mild Dijon mustard
    1/2 tsp. Salt
    1/2 tsp. Truvia sugar substitute
    1/4 tsp. fresh ground white pepper
    3 tbsp. extra virgin olive oil
    Blend together all ingredients except for olive oil. Once combined, then slowly add olive oil to emulsify.
    Store in refrigerator for up to 5 days.
