We're taking chili to the next level with a twist on this classic meal, WHITE CHICKEN CHILI! Lower fat, better nutrition, boosts your immune system and is simply delicious.

    ONE POT, ONE SPOON WHITE CHICKEN CHILI - AMAZING!
    Prep Time: 30 minutes
    Cook Time: 3-4 hours (in a crockpot)
    Total Time: 4 hours, 30 minutes
    Servings: 12

    Ingredients:
    3 teaspoons Vegetable oil
    3 medium Onions, chopped
    3 teaspoons Salt
    ¾ teaspoon White pepper
    10 cloves fresh Garlic, minced
    5 teaspoons ground Cumin
    3 teaspoons dried Oregano
    2 bunches of fresh Cilantro, divided ⅔ & ⅓.
    3 Jalapeños, seeded and fine chopped
    6 cups Chicken stock or broth
    3 pounds of Chicken, light and dark meat, chopped
    4 (15oz) cans of Cannelloni (white kidney) beans, drained and rinsed
    Optional ingredients:
    2 tablespoons cornstarch
    2 tablespoons water
    ½ cup Milk
    Garnish ingredients:
    ⅓ cup Cilantro
    ⅔ cup Cojita Cheese, crumbled
    ⅓ cup Jalapeño, finely chopped
    3 Avocados, chopped
    INSTRUCTIONS:
    Preheat Crockpot on high setting for 30-45 minutes.
    Add oil, then onions, and sauté for 2-4 minutes or until slightly transparent.
    Add salt and white pepper and stir, then add garlic.
    Once garlic is fragrant, add chicken and stir. Then add Cumin and Oregano, continue stirring.
    Add Chicken stock or broth, jalapeño and ⅔ of the Cilantro.
    Cook for 2 hours or until chicken is cooked through.
    Add beans and lower heat until heated through.
    Optional:
    For slightly thicker chili, mix together cornstarch and water to form a slurry, then stir into chili to thicken. Simmer chili for 20-30minutes more.
    Taste for salt and seasonings, adjust if desired.

      Diabetic Savvy with Davis Knight well I sent it to my mother because we always cook with pressure cookers and crockpots. She just can’t seem to stick the landing the way I do with certain dishes. LOL. And she looks after my brother who is a diabetic. So I figured this would be a good recipe for her to try out since they are on lockdown. Guess who is going to have to risk his life going to the grocery store for them though! LMAO. Maybe I shouldn’t have sent her the link? ☠️😹

      Sammy, Try the chili as is, its amazing. And I say that as someone who’s not a big chili fan. The other great thing about this recipe is that all the ingredients are easy to find and inexpensive. Yellow peppers are pricey right now. As for going to store, be safe.
