I have no + sign in the Palettes menu, but as close “x” sign.
How did you do it then? For me too
I dont have the + icon, how to do it now?
What does "hold a tap" mean?
There is a setting under the wrench icon for "prefs" then a ways down you will see "Gesture controls". Make sure under "Eyedropper on the left, that "Touch and Hold" is set to on. This will allow you to touch the screen, hold and a colour will be picked.
Picking the colors by tapping didn't work for me.

Much easier to do “New from Photo” then just remove what you don’t want.
