I wish they had a Costco near me, all we have is Sam’s. And I love the scan and go,I’m in and out in 15 minutes. Also I got at 8am when they open and buy the 25% off meats. I’ll take it home and vacuum seal and freeze it till I need it.

I am really enjoying these carnivore videos. I learned something today. I never really paid attention to the grade of the beef I was buying... prime vs choice vs select.
Prime is leaner - I do choice for more fat. Just an FYI. You pay more for Prime because they trim the fat.

Costco chuck roll here in Arizona is $4.29 Lb. Thank you for this money saving knowledge. I bought my first box of chuck rolls.
According to the online, a case of chuck roll is also 5.69 a pound at my local samsclub. It's a tough price for me to pay when last fall I was getting ribeye and T-bone at $6 a pound. At $4.19 a pound I'd be far more inclined to try it out.
Truth be told, most of my red meat intake is burger meat. It's so versatile (and I'm not doing carnivore for context, I just adhere to CICO and have shed 100 lbs so far doing that). I can patty it fry it, eat it with eggs, make it into sloppy joes, make it into sphagetti with veggie noodles, make tacos with low carb tortillas.... make stew or soup (love stuffed green pepper soup) and so on.
Anyways, the only reason I mention the burger is that my local sams had 10lb tubes of 90/10 for $3.99 a pound today so I grabbed one. I tend to eat around 6oz of red meat on a daily basis. That'll last me the better part of a month. I tend to mainly go to chicken breast and pork loin for my lean protein needs as I can usually source either at around $2 a pound.
Thank you for doing the comparison video! Appreciate the insight. And kudos on keeping the older car on the road. It gets great fuel economy and I'm sure it's been paid off a long time! I continue to drive my 2008 dodge ram truck around for the same reason (minus great fuel economy).

Beef tongue makes the best street tacos in the world. My son turned me onto those at an outdoor Taqueria in Pittsburgh. I cook mine in a slow cooker.
I am so sad to find out they changed the pork rinds at Sam's. It used to be pork skin and salt nothing else. I still have one with just those ingredients. So I'm guessing that's a very new thing.
I also have a Costco card but it's pretty far from me but for prime cut and that much cheaper I will happily drive out there. I also notice that Costco has more pure healthy items compared to Sam's. I think now the only benefit for Sam's are paper products and soaps that come out way cheaper than Costco. Also thank you so much for doing this! It has helped me tremendously.
The Pork Rinds at Sam's Club are a great value and are very tasty with the natural liquid smoke. Liquid smoke is just a natural byproduct of burning wood. The exhaust of a wood fire is smoke and steam; fire produces water in the form of vapor, and when condensed through a cooled tubing, captures the smoke. This liquid is distilled into a concentrate and filtered out of its impurities (soot and ash). Liquid smoke is a natural product that people have been making for hundreds of years, nothing to be "a'skeerd" of.
There are no funky unwanted ingredients in a natural liquid smoke like there are in so many other products with "natural flavorings" that could be anything.

The only way I know to have tender meats is to slow cook it 🙄 I didn't renew my Costco 😂I guess I will now. I'm back to buying ribeyes for a while . Choice t-bones at Kroger $5.99 lb. Family pack limit 2, but you can come as many times as you want for a week. Brisket last week was $1.87 lb. God loves Texas

On one of your videos the box of your chuck roll from Costco said choice not prime. That is also what our Costco sells. Costco says they never get prime chuck rolls. Check it out.

Yes it is choice at both. When I went to to Costco to get the box it was indeed “choice or better” so I was wrong. Apples to apples then! But…$1.49 more a pound at Sam’s! 😱 that’s a huge difference when you’re getting 80lbs. $119 savings!
@@StevenSteph I think a lot of it has to do to how you are cooking it. Beef cooked rare or medium rare can be fairly tender. When it is cooked to medium well or well, the proteins bind and it becomes tough. If cooked low and slow, those same proteins will then unwind again and soften up.
Got a Costco whole chuck roll for $4.59 lb yesterday. I butchered it into chuck eye steaks, Denver steaks, and 14 lbs of ground. Nice yield. I also got a smaller brisket, trimmed the flat for grinding, and smoked the point. The smoked brisket came out awesome.

Do not waste your money on disgusting beef tongue…the texture is awful.
I would not feed it to my dog. Very bad meat.
Buy…eye of the round…and bake it the 500 F degree cooking method as described on the internet. It comes out very tender. And delicious. I usually buy 4 whole vacuum packed eye of the round when on sale for $3.99/lb. A whole piece is about 6 pounds. I bake one and enjoy all week! Hope this helps!

I had it once years ago on vacation when I still lived in England. I didn't realize what it was as I thought it was regular beef. It was tender and delicious. As a home cook, maybe I'll give it a try.
@@gladysobrien1055I know right? My mom used to make this back in the 70's. Tongue was a member of the "cheap collection of meats" family, which included beef kidneys, oxtails, chuck steak, beef liver, chicken wings and London broil.
Back then we used to have to sit there until we finished our food. The taste and texture of tongue was awful. Maybe it's because of the torture of having to sit there for hours until the tongue was consumed, but I will never buy that for myself as an adult
@@Mhel2023 Beef Tongue is not even available in our stores… I was served it over thirty years ago. Oxtail, which I thoroughly enjoyed as a stew, again over thirty years ago…if you can find it is $15.00/lb. I would rather buy RibEye on sale for 🇨🇦 $8.99/lb. This is Canada🇨🇦Our grocery stores do not offer meats that do not sell. These days calf liver is not available. And private family owned butcher shops no longer exist.
I get the pork rinds called baken-ets! They are so crunchy soft! I can’t eat the hard ones! I can only find them at piggly wiggly or dollar general! Those prime rib burgers are so delicious!

Costco here in Bradenton Florida chuck roll is $4.59lb We got our first one, cut it up like you did and we are on day three and they have been delicious. Thank you this awesome money saving tip!!!

...also, look for a Costco Business Center - not the regular consumer locations - this store is strictly for businesses. Your card works there for sure. There's no clothes, no prepared food, no homewares, etc. Most is truly in bulk and they sell commercial equipment too. That's where I get my bigger meat purchases, eggs, butter and Evian water. Check it out, if you have one in your area.
And, not the crowds. I have never seen more than a few people there. Their business center is close to my house so I will shop there first.
I only eat 100% grass-fed hamburger from Sam's Club, 85/15 and $14.94 for 3 lb pack. That's half what the local rancher sells it for and cheaper than Aldi, Lidl, Food Lion, Harris Teeter, and of course, Publix.

Thank goodness you clarified after going to Costco the Chuck Role was Choice. I thought after spending 300.00 @ 4.19 a LB (Spokane WA) I was given the cheaper meat but sounds like all the Costco chuck role is Choice only. FYI - that cheese you chose is yummy!!

This is the video I've been waiting for. I was wanting to check out Sam's but the closest one is over 30 miles away so needed to know if it's worth shopping there or getting a membership there. I wish the 4505 came plain. Good to know it's semi compliant with the spices.
I've made a tongue. Basically it's a slow cook braising kind of situation. You do have to trim or peel off the the skin. Easier after cooking. I cured mine with curing salt so it stayed pink but it will normally cook up light brownish. It has a lot of intramuscular fat so it's very tasty. I cut it thin and fried it for a pastrami like sandwich. This was before carnivore but I got the tongue because I had purchased a grass fed steer with friends and no one wanted the weird meat so I took it.
Costco has boneless lamb roasts for $5+-$6+/lb at ours they're good! I was surprised to see some beef tongue at Costco the other day. Growing up we'd pressure cook it with cloves stuck into slits we'd cut plus some other spices, makes great "sandwich" meat. I have also seen lamb at Aldi now. We have tried several pork rind brands and like Mac's best so far too. Thanks for doing the comparisons!

Try getting Halloumi cheese! You can cut it in strips and fry it in a little bacon grease or beef tallow. This cheese does not melt and made for frying. Fry for about a minute or 2 each side in a non stick skillet. Yummm
Have you found it in stores, or do you mail order- I’ve had trouble finding it in stores.

Hey Steph: please double check concerning Costco chuck roll being prime. I screenshot your last box and it clearly stated it was choice (not prime) on the label!

I don't realize why people don't even think about their savings from Sam's Club. When they get a rewards account? You're saving enough money to pay for that account so many times. So the account is a free account, no need to lose it to save money! Also the price of gas there, would make me not be able to shop as a carnivore in Alabama. Our gas is $2.96. But I drive a Tesla now and at $1.34 per night, then I can pay for those prime burgers LOL. But the best thing about Sam's Club, they will actually mark down their price and Costco won't. Matter of fact, if you see any brown Brown on meat that's not marked down, you can mention it to them and they'll go ahead and mark it down right then. So with that savings rewards card that I mentioned in the beginning, you can get there at 8:00 and get to those discounted meats before anyone else.
I shop at both Costco and Sam's and have found that Sam's is more customer friendly where you can have orders waiting for you and their app lets you scan and check out and just walk to the door with the QR receipt and no time in any long line. Costco treats their customers like cattle.
Yep~ it's $5.68 lb @Sam's here in Tucson too, basically all over AZ @Sam's Clubs.

Have you tried the red bag GV brand pork rinds at Walmart they're HUGE and super Fluffy, very few hard unpoped ones and they're only salt and pork skins. Yummy!

Look around usually a free or nearly free Sams club membership after you haven't been a member for 6 months. I do 18 month cycles, I'm a single guy and can't save enough money for the membership, but for $20 it works, I think they actually paid me $5 to become a member last time. Groupon had a 20% off...
$4.39 for gas and PGE/SCE jacking up electric costs. At least you have costco and sams to feel good about.
My dad owned a deli, and the last time I tried tongue was in the 50s. I remember it being a bit chewy and salty. My favorite was Liverwurst on a Kaiser roll. 😋
I've been a Walmart parking lot pickup customer since the beginning of Covid, but a couple of weeks ago they made me wait an hour for my stuff (vs just a few minutes each week for four years). I sat out for a couple of weeks, and then I decided to take laps through the Costco Business Center...and today, the regular Costco...to see if I could replace Walmart.
But...Walmart has me spoiled. The convenience and selection can't be beat by Costco (and I know they aren't trying to do that). I shopped Costco-only for decades, but now I'd only do that if there were no other choice. But, I did spend $250 at Costco, today, so I did get a lifetime supply of some things that I won't have to pick up at Walmart. 🙂
There were a couple of disappointments at Costco. Where are all the sliced cheeses they used to carry. The only sliced cheese they had was American cheese which barely counts as a cheese. And years ago they got me used to the Morningstar Farms brand of (non-meat....sorry) things, and the brand was nowhere to be seen today.
My new plan is to work things out so I hit Costco and Walmart once a month each.
I did try Sam's Club years ago, but with a Costco membership, there's was really no need.

How did you make the tongue? I grew up on it, being Jewish, it’s big in delis. We eat it boiled, or soaked in brine and spices, sliced paper thin. I like it, but then I start to think what it really is. 🤣

The prime rib patties are pretty good
When I get to where I'm more strict carnivore (and my freezer is empty), I'm thinking of getting the chuck roll. I only have my fridge's freezer, so I can't really buy too much. I'm still having a small sweet potato with my breakfast and I still occasionally have beef chili with beans. I'm getting there.
I gotta say I bought one of those small chest freezers and despite living in a smallish apartment I don't regret that purchase. I hadn't used it yet then the pandemic happened and I brought it upstairs found a place for it and never looked back. It's only about 4' wide and 18" deep 3' tall. Holds plenty for one or 2 people.

A lot of 🇺🇸Beef is from 🇨🇦Alberta, Canada…bought with lower🇨🇦 Canadian dollar at a 35% discount. Cargill has a processing plant just south of the 🇨🇦🇺🇸border and voila…it is now 🇺🇸USDA beef! I think that is what keeps 🇺🇸Meat prices lower…you buy every thing Canada🇨🇦can sell‼Enjoy‼

They are short ribs flanken is the style which is thin cut
Costco has a different variety but Sam's club meat has always kinda had a superior offering whether it's taste or price I think the only thing that I see that you can't find is the ribeye cap stakes

Tough Choice Chuck roasts are fine, I just pop it in the Sous Vide water bath for 8-12hrs @ 133° and it's always perfect!
Then what…I sous vide extra pork chops that needed cooking….but after that …they did not brown well…and the texture changed when compared rot fresh grilled. What did I do wrong? I was not impressed…why does everyone like sous vide? I hesitate trying it again…meat is expensive here in Canada🇨🇦
@gladysobrien1055 Watch the Sous Vide Everything channel on UA-cam to learn everything you need to know about SousVide. After taking it out of the Sous Vide bath, it needs to be dried and seared to give it a nice crust while being perfectly cooked and juicy. BTW, cooking temp for cooking pork sous vide is between 130°-160° any hotter and it will be overcooked. I use 145°, right in the middle, and it comes of really good.
@@johnwiese3926 Oh, thank you for your wonderful details…I believe I cooked the pork to 160F because I like very well done pork. Plus…If is is not browned to the colour of unsmoked tobacco…I do not like the texture…and I gag on it. All because when I was a child…that was the way pork was cooked to prevent trichinosis. Even in home ec that is what we were taught. Pork = very well done!
My favorite Mexican restaurant (AZ) has beef tongue tacos, quite good actually but not sure how they cook them/it.

I am a Sam's member and like their scan n go too, hate sitting at a register. Also lately got into getting the free shipping on the box items. my dad when he was around had both. he originally had a Sam's from almost from day one when they went in around here when you actually had to have a business and not anybody could join. that is how i got started under him as an employee account. Now anyone can join by paying a membership fee. Then just a few years before he died he joined costco too. He liked Costco because he liked their bakery department better, He did the coffee hour at church quite often. I am not a sweet eater so that never turn me on but that $1.49 might send me to get a costco card too. Sam's here is also $5.68 for a case or for one chuck roll then it is $5.98
You should try to opt for the Baked Pork Rhinds..but they're all great.
I crush them up put them in with a can of water packed sardines and mustard - wow what an aswesome treat. I eat that every day. tons of Protein, some good fats and great Omgea 3.
If you have a winco in your area.. you might want to check there for your Pork Rhinds.. I get 4 ounce bag of Mission Brand for $1.99 each. last week they had .55cents off coupons on the bag.. so that prices about the same as what you paid at Sam's club per ounce. But they always have them. I grabbed a bunch. They are really good snack too.
How do you prepare the flanken short ribs? I attempted to grill it once and it was soooo tough!

In uk the really crunchy pork rinds with the fat on that you are talking about are called "scratchings" you need to try "black country scratchings"thats the best brand you will ever find 😊

I avoid the Sam's brand pork rind tub because the oil the skins are cooked in is NOT given. That's telling when it's not included on their list of ingredients. Just food for thought😊
I checked the ingredients online, and Sam's lists the oil they are cooked in is the lard the skins produce themselves.

try Halloumi cheese, you can grill it!
If you want a good chunk of meat to grind, get a brisket. Bend it in half if you want more fat, will be difficult to do so.
Smoke flavors will usually give me a migraine. I would pass on those too. Leg of lamb is the best! Tongue is great too.
Costcos steaks are blade tenderized. They say to cook them to at least 145 degrees.
Winn Dixie meat cutter told us yesterday that all the meat at Winn Dixie comes from Mexico or guacamole none of their meat comes from America along with aldis
Actually my Sam's best burger deal is the wagyu burger. And it's the best burger I've ever had.

Do you have to buy a whole box of the chuck rolls? Or you can only buy 1 piece at a time?
You can buy 1 roll out of the meat cooler but it will cost like .30 more a pound. If none out then ring the bell for the butcher. You get a discount if you buy 3 rolls at once and then you have to get the workers attention because they don't stock them out on the floor. Almost any type of meat you can buy by the box/case if you get hold of the butcher. i use to get like .70 off a pound but since these times it only varies like .15-.45 now depending on what cut of meats you want.
The archer minis beef sticks at Sam’s are clean
I bought the whole sirloin at the butcher last week for 519 a pound and went over to the Case for the steaks were already cut and the sirloins were selling for 1199 a pound
I prefer Sam's for many reasons. They mark down their meat two days before the sell by date. I get there early when they open and get all the marked down steaks, ground beef, salmon and lamb. The Scan & Go is worth the membership alone over Costco! And finally, the employees at our Costco are incredibly arrogant and rude to me...every time I'm there. Whereas the Sam's club employees are always helpful and friendly!
Where I live Sam’s has WAY better quality meat. Sam’s also has more cuts that are prime. Costco chuck rolls where I am are $4.39/lb. Sam’s carries Angus brand beef which has more marbling than other choice beef brands. That’s why Sam’s choice beef tends to be a tad more than Costco. Sam’s here is $5.67/lb for chuck rolls. It’s worth it. That extra fat and flavor from the angus is so yummy!!! You should get a chuck roll from Sam’s and compare it to Costco.
I agree where I am at Sam’s has way better quality and selection than my Costco. I like them both for various reasons and variety.

I tried chuck roll with out success. I went to Costco and asked for the price and he said they have some in the case that have been cut. Not knowing anything found it packaged like other meat not like you show. maybe part of chuck roll? Got it home and opened it up and it was cut length ways in two pieces. I cut them length ways in the middle and got 4 pieced about 2 inches thick and cut them in half. Saw big hunks of fat and marbling in the meat. Got a new pellet grill and tried that. Cooked with the grill prob to 125 degrees like I do in the air frier. I tried probing with a hand temp gage and the piece was tough. Cut it open and nice and red inside. Problem there was a lot of membrane that made cutting difficult and had to pull it off. The meat was chewy. Don't know the grade or if I got the right piece of meat. it was $6.99 lb. Enjoy your videos. Maybe next time look for it packaged like you show. Also looks like you butcher across the grain then cut that in half. I cut with the grain, don't know if that makes a difference.
Yes across grain makes huge difference in basically all meat cutting!
Smash club in Maine for the box of 3 chuck rolls are 5.69. wish they were less expensive
