I added chicken, diced up breast meat with the same dry seasonings that you guys used with a little oil in a zip lock bag (I let it sit in the fridge for a hour or so). Tossed it on at the same time as the bacon. And added it to the quesadilla along with the jalapeño bacon cheese mixture. It was amazing! Thanks for the recipe!

I am an avid multiple bacon flipper. Pull it off right before it looks “done” to your liking. And maybe cook it on a lower temp than normal. I usually cook mine on medium/medium high. Slow rendered bacon is bangin!
