Before COVID i was active in a bare knuckle underground fight club and very close to one of our fight pits was a food truck that served a similar burger and boy was it delicious! After a tough loss it was pure comfort food.

The frico was a great Idea, I think the steaming softened it. It melted the cheese of top, and softened the crispy cheese on the bottom, I would use an old can, with the bottom cut out, that way you could flip it with the ring on, like I do with English Muffins, plus the metal heats up, and starts to crisp up the sides too.
I hate to throw Nate under the bus...but I sent him on the grocery run and this is what he brought back. He’s a seriously uneducated nube when it comes to Mac-N-Cheese. I work with what I have lol

These burgers look fantastic, but I think if I were to make them, I would have to make a substitute and use the Mac & Cheese from Chick-Fil-A as it is very good. My luck with making Mac & Cheese has not been the best.
