Such a great recipe, Ida! I always like to throw in a handful of peas like my tia, Raquel (from Puerto Rico), used to do. She just turned 102! and insists on the peas. Who am I to argue lol?

Thank you SO much for your suggestion to soak the rice. I think that far too many people try to make asopao and do not soak the rice first so, when they cook - and in order for the rice to be cooked fully - the dish comes out more like arroz con pollo. The soaking is ESSENTIAL! Thank you!

Do you ever add any vegetables in your asopao? Mi abuelita usually adds patatoes and carrots to her asopao de pollo. Also I love the idea of tostones, but I'm use to arepas with asopao.😀
I do for soups, but traditional asopao is just rice.
My mom always adds potato’s.

Nice video and recipe. It’s actually closer to a Jambalaya or Etoufee than a Gumbo ( which is made with a dark roux). She may have chosen the word Gumbo because she keeps it soupy. In any event, it looks really delicious, lol.

Ida, noticed that in a lot of the PR recipes call for Canola oil. Is there a reason for that? I usually use either vegetable oil or corn oil. I also buy extra virgin olive oil. When I do my tostones I use regular oil. Just wondering. Thank you for your response.

Thank you for all of your videos that I have enjoyed watching and made. However, I find that this one is a misnomer. I went to PR in June 2017 and ate Asopao de Pollo, and Asopao de Res. To me they were (are) Puerto Rican style soups, not gumbo. I live in New Orleans, and to us Gumbo starts with a roux, otherwise it's not gumbo. Esto lo digo con todo respeto.

Yes! You can use any piece of chicken
Less room for error with breasts because they dry out
Thighs will almost never dry out

This type of soup can be made with chicken, beef or shrimp. They all taste GREAT.

How do you keep the rice from becoming moyogao with all that liquid??
That's why you soak it first. At least 30 minutes, but you can soak it in water for up to 2 hours

It looks good but too much sofrito for me. A lot of Puerto Rican’s cook with a lot of sofrito then it over powers the food and that is all you taste.

It's only 1/4 cup, which equals 4 tablespoons. It's not a lot. It doesn't overpower the rest of the ingredients. It's 8 cups of liquid.
Try it before saying it's not good.

I tryed cooking this soup, but unfortunately didn't come out well, had no ideal how to cook the plantains 😭😭

msjuicy hi you can eye it. 8 cups of water or you can add cause the rice sucks it up you can always add more.

I did, at the beginning I said 4 cups water, 4 cups chicken broth, and when I added it to pot I mention the measurements again.
