I made theses! They turned out incredibly fluffy and soft. The fluffiest, lightest textured brioche buns Ive made.
The flavor was mild. Not as sweet and strongly flavored as store bought brioche. Supposedly long cold ferment enhances the flavor.
Excellent recipe. Now saving as my go to brioche bun recipe.
did you use instant yeast or just regular yeast?
I’ve made this bread three times, gonna try it out for pizza dough. I’ll edit if it’s not the most amazing pizza dough I’ve ever made.

I'm pretty sure it will be longer than 15 min but yes!! Not every bread maker needs a kitchenaid lol
For a brioche, unfortunately no you cannot. It is one of the hardest bread types to make on account of the butteryness of the dough and the mixer is required. Sorry, the first reply is misleading.

Egg wash (whole egg) + Sesame seeds
This is very similar to the bread recipe I’ve been using. Like even the measurements are pretty close. I use 525g of bread flour for example. Only thing I do differently is add a tangzong

@@katec5105 it's a roux with water, milk and flour. 2 tablespoons of bread flour, 2 tablespoons of water, 4 tablespoons of whole milk. Whisk to combine, then whisk constantly over medium heat. Once it forms a paste remove from heat. Then add it to your dough just before you add the butter. Makes the bread even softer & more brioche like

I tried this with the ingredients. It was extremely dry. I couldn’t get the dough to form at all. It wasn’t gooey at all like in the video. Is something off?
Double check measurements & try with 3 eggs if the eggs are sort of small (just my ideas as a home cook). Good luck
How do you store these if I cannot finish all in one day?
Fridge or freezer
I use gallon size plastic bag when cool. Stored at room temp. However they will spoil in about a week since there are no preservatives.

Google convert grams to cups
520 grams = 2.20 cups. Or 2 and 1/5th cups
There is a concert bakery table and converting set ups online for all types of measurements. I hope this helps
Baking requires precise measurements hence why weight is used and not cups. Baking relies on complex chemical reactions and this is why you need correct ratios otherwise it won't react correctly.
Cooking foods for the most part is quite relaxed but Baking anything requires precision.
