If you’re not going to eat the tomatoes within a week I wouldn’t use fresh garlic unless you slice it and boil in a water vinegar bath first. Garlic powder is also a good idea.
I have few questions regarding how to store them. Do you CAN them? like put hot oil up till top and close lid so they can pop and air seal? Do you have any preservatives? salt, garlic, mustard seeds, citric acid are kind of natural preservatives. Why store bought are air sealed and full of artificial preservatives like nitrites and sulfities?
Acorn, I'm not the person who posted this, and I know this is a month late, but apparently, there is no safe way to can Sun-Dried tomatoes at home as the low acidity and no oxygen is an environment for botulism to grow. Apparently, the reason for boiling them in a vinegar-water solution is to help them keep longer. I hope this helps you or anyone else who reads this.

if you want to keep it long time, you need to boil the oils. 2 oils because olive oil is too thick. And no, you can't eat them right away. need to wait few days
@John Quinn What I am doing is to boil again with the jar firmly closed in water for about 20 minutes for sterilization. After one year on the shelf, they are still delicious.

Island_Girl if left unopened, they can last up to 9-24 months. However, they can last anywhere between 6-12 months once opened. I’d recommend eating over the course of 1-3 months. (Of course, eat them AFTER they are properly after 5-7 days)
Lol Americans always love the easy way. Where is the sun?? It's oven dried tomato!! Belive me the taste is different when you dry it naturally with sun. It's more delicious.

You really need to explain why it's ok to put fresh garlic in the mix. Someone could become very ill from life threatening Botulism if they added fresh garlic into a sun dried tomato recipe and didn't take the extra steps that you did. @@tastycookingrecipes1220
Does the title not say SUN DRIED TOMATOES? Then why do you dry them in the oven. I've been making them for decades and we never heat the oil, and never mix vegetable and olive oil. You should always sterilize the jars and lids before, dry them completely and then sterilize again for abour 20 to 25 min and have leave in the water until it cools off.

Why do you need to boil them in water with vinegar?
The vinegar and heat kills bacteria which makes it safer for long-term storage and reduces the risk of botulism. Very important step…don’t skip it.

Depends on your flavor preference. I like adding roasted garlic + fresh garlic.

It needs to be fully submerged in oil. I had the same outcome when the oil level is below the tomatoes vs when fully submerged 😊
