    On today's video I'm doing Cedar Plank Salmon w/ a Maple Bourbon Glaze!!! I started with one a pound, skin on, whole salmon filet that I picked up from my local farmers market and got it glazed up with a combination of pure maple syrup and four ounces of a good bourbon. The glaze not only adds flavor but it also acts as a binder for our rub and seasoning to adhere too.
    Our seasoning consisted of a 4th of a cup of brown sugar and two tbsps of Simply Citrus from Heath Riles Bbq. Now if you don't have a citrus based rub, you can take the zest of one lemon, one lime, and one orange and mix it with the brown sugar, OR just the juice of each and make a paste to spread evenly over the salmon.
    Once rubbed, we let it rest in the fridge while we got our grill started. This was cooked over direct heat on the weber kettle. Once we got our grates in place, we laid our cedar plank (that soaked for 2 hours) down first, then laid our salmon, skin down, on top. Nothing left to do now but let it cook!
    Halfway through the cook, we lay a slice of orange, a slice of lemon, and a slice of lime down to add another hint of flavor before letting the salmon finish cooking. Once it hits 150 degrees, remove from the grill, let rest for five minutes, and VOILA!!! Cedar Plank Salmon w/ a Maple Bourbon Glaze
