140摄氏/华氏280 蒸烘烤 50-60分钟
140°C / 280°F Steam Bake 50-60 minutes

I tried doubled the recipe using 5 egg yolks, 5 egg whites and 1 whole egg, reduced sugar to 80g, 140°C 90 minutes. It came out perfect, soft and fluffy. Thanks for the recipe.

Highly recommend this recipe. I made it. Cake is super soft and full of air. The banana flavor linger the whole mouth as if I add the banana essence!
*Didn’t have a stick blender home, so I crushed my banana with fork and whisk it to muddy.
Cake still rise for no problem.

Can you please show us how do you cut the parchment paper to fit so well in the cake tin. Thank you 🙏🏼
Say you have a 9x9 inch pan: take a sheet of parchment paper thats (obviously) much larger than that, and measure out a 9x9 square in the middle of the paper, and then fold the paper onto itself so your're left with a 9x9 square in the middle. Then cut the paper like how the paper in this video is cut, and voila. Its a bit tough to describe how to cut it, but it should be four cuts, with only two sides getting cuts. You can also lay your pan on the parchment and scribe the shape of the pan on it, and make it slightly smaller to fit. Hope that helps!
Can I use a round mood instead? What size of pan and temperature ?
Hi Apron, I’m using the Combination Hot air& Steam Oven at 140’C, after 60 mins, the Cake didn’t cook well, sides are cooked but inside is still raw. Could this be caused by the Oven that’s not hot enough? The sides are fluffy, but the centre is still raw. Thank you for your recipe & guidance
Hi, because the temperature of each oven is different, you may need to bake more time or increase the temperature by about 10 degrees

Hello. This steam bake simmer the tin in the water but other 2 ogura cakes steam bake u have a grill on the bottom separating the cake tin from simmering in the water. So which is more suitable to use?

你好,有很多原因造成,可能是烤箱溫度過高因为每个烤箱的温度有差異,需要適當的調整一下。不同的模具材質受熱程度有差異這也是原因之一
