I made this today, it was sooo good! Really light and soft, like a Japanese cheesecake! Here are some tips and things you may find helpful: • I was kind of sceptical of how it would turn out, mainly because when I had made the oil flour paste, it turned into a dough like a choux pastry. I then added the milk and banana and it was still very dough like. However, when I added the egg yolks, it came into a paste just like the video! • Don’t overwhip your egg whites, this is one thing I have learned whilst making these cotton style cakes. Making them too stiff can result in it being too hard to incorporate into the egg yolk mixture, resulting in over mixing the batter. • This was my very first time using the water bath method! And it went pretty well... I used room temperature water and filled it to about half way. I didn’t have two square tins, so I just put the one tin with the cake batter in, which I don’t think made a big difference. If you have a lose bottom cake tin, you definitely want to put it inside a bigger tin though as the water can leak through. I definitely recommend you make this cake, it is so soft and fluffy and a change from normal banana cakes!

昨天做了双倍份量、太好吃了!我香蕉较多,减了点糖、没放柠檬汁,一样松软好吃.
我做了几次,因为温度不一样,所以不停尝试可是几次到最后里面还有点湿,每次都要离开水再烤,如果说不用水浴法直接烤,行吗?或者说里面原来就是会有点湿的,是我以为它像其他蛋糕里面会是干的,就一直加时间再烤。
