ラーメン屋、特に家系ラーメンのチェーン店、それの蕎麦屋バージョンと想像してもらえれば分かりやすいかな。
ラーメンより客単価望めるし、高齢化社会でも伸び代あるからね。
ちょい飲み、ランチ、会食、使い勝手も良いし、システム化されてるだろうから、各店舗で従業員の難しい作業も必要ないだろう。
おそらくセントラルキッチンか提携先があるだろうから、品質も安定している。
全国展開も十分ありえるね。
