I am totally obsessed with my inspiralizer. It sits on my kitchen counter and I use it everyday...my refrigerator is full of fresh vegetables just waiting to be spiralized. Its so bad that each day my husband asks, "what are we having spiralized tonight"? I am on a Weight Watcher's journey, so this is wonderful for me, I am eating so healthy....thanks Ali for your recipes and book.

Made this last night and both my husband and I liked it. I used deli ham instead for the meat because that's what I had and it turned out great. My husband said it tasted like it could be a breakfast side dish, haha. We loved the sweet potato noodles! Thanks for a great meal idea!
Another awesome video! I have never ever tried Carbonara but always wanted to so here is my chance! This recipe will be my first carbonara experience. I am confident i will love it especially if Lu gives it a thumbs up! I love seeing your personality shine throughout the video because it makes it authentic & you can see your passion for spiralizing in your face & movements. It makes the viewer want to try spiralizing too! Then once they do & try one of your recipes they become permanently inspiralized! Its a conspiracy! Lol. While i am a darn good cook (if i do say so myself), i always followed recipes. I have learned so much from you & how you choose certain ingredients to go together. I like how you obviously have a goal to be super-healthy but you keep it real (and tasty!) by adding panceta and parmesan. I think if we all just lived off kelp, sweet potato noodles, and free range ultra organic cold pressed Andean chia seed oil (I made that up) we'd be a little cranky.

I was so frustrated with my little pencil sharpener type spiralizer and decided to look for a more technical one... I almost ordered another brand but thankfully this one popped up just in time! the inspiralizer is sooo cool! going to have a lot of fun with it!! If you don't eat meat, but still want a good flavor to this dish do you recommend substituting the pancetta with another ingredient or just omitting it completely? This looks really good and I definitely need to try it.
Sorry for more words after that long comment but i have a question maybe you could clarify for me. Please correct me if i am wrong, but is Carbonara sauce supposed to be somewhat saucy meaning i shouldnt let the egg cook all the way through? Or how much am i supposed to cook the sauce once it is placed in the skillet? I wouldnt want a skillet of scrambled eggs would i because then there really isnt any sauce in that case? I appreciate your help w/this Ali.. Or anyone who has experience w/Carbonara sauce. Thank you!
This looks great, but I'm surprised you're adding the egg mixture directly into that hot skillet! a carbonara sauce comes together a lot better if you add the cooked noodles (or "noodles"...whichever (: ) into a very warm bowl, and while constantly stirring, slowly add in the beaten egg and parmesan/pecorino. it creates a luxurious, silky sauce that coats the pasta. the eggs are still safe when mixed into the hot pasta, but they don't scramble. if you add a beaten egg directly to noodles in a hot pan all you'll get is noodles with scrambled eggs!!
A recipe is only a guidance, not set in stone. You can always change it to fit your style, believes. I loved this receipe. My family loved it. Still a healthy recipe.

If your a spokes person for this product you might talk to someone about adding a cutting device for this cutter, I was thinking those spirals could be a bit to long and could be embarrassing if you had company. Just saying. It could happen. But I love this idea and your a great demonstrator. This sounds so awesome.

I bought a spiralizer about 3 mos. and I have not been able to get it to work. If I can't get it to work I will be a force to through it away if I can't use it and maybe try to do it manually. You make it look so easy so I know there is away.

there are some decent vegan substitutes at most health food stores. Try that.
I was thinking mushrooms, with pepper or paprika or something like that. Probably try this tomorrow.
Maybe sub thinly sliced and baked portobello mushrooms
Try with smoked tofu instead of pancetta...taste delicious!

It's important to snip the noodles with scissors as you spiralize or afterwards! Yes, the noodles can get quite long!
