After visiting Turkey and tasting lachmaciun, gözleme, pide, I consider pizza as too plain and simple. These Turkish dishes are the best. Thanks for making it possible to make them at home.
I am cooking this NOW!!! I am Indian (in South Africa) and I have noticed when watching Turkish series and your videos that there are so many similar words and cooking styles and ingredients...I love how we are all connected. Turkish food looks amazing! You are amazing! Happy New Year to you and your team Refika
I come from a part of Kerala in India that has a very unique cuisine. It is said that my ancestors were men from Persia, who married the local women in Kerala when they came for the spice trades. I am no more surprised at the similarities of the dishes that you make, with the local delicacies my community is famous for. These dishes are not found anywhere else in India and we also have various versions of your perfect GÖZLEME. Isn't it beautiful how food connects and tells the stories of people from two parts of the world, bound by the love and quest for spices? Happy new year to all of you amazing people and I can't say in words how much I love your channels and hope that once this pandemic is over, I can visit Turkey and meet you all in person. (I used to visit Turkey as a child while growing up in Dubai and love love the food) Ps: Please give my extra love to Borek, who is my favourite. :)
Beautiful!! Persian and Turkish have so much in common! When the Gokturk moved down across the Iranian plateau and the Seljuk ( from whence the Kayi Osmanlii come) set their capital at Isfahan, a great culture of food came about. Iran today still retains many of these foods. I loved your story!
We have also same thing in Maghreb cuisine it s called mesmen but its done with semolina and we filled it also but not dry more solf and made with oil semoulina yeast water and long time of preparation
Wow! These are very similar to our Mexican quesadillas made with flour tortillas. We even make the potato filling the same way for our “tacos sudados” which translates to “sweating tacos” but we make these with corn tortillas. Very interesting how similar our cuisines are. Chef’s 💋
Refika I don’t remember if I told you but here in US my sisters and I live far apart- we all watch your videos and then text each other, it’s a wonderful bonding thing for us!
I ate Gozleme in Turkish airlines for the first time when i flied from Istanbul to Seoul. It was really simple but delicious snack. I would like to eat this also in my country, Korea.
Dear Refika, during my childhood in Central Anatolia (not far from the region your father came from), women used to make flat bread (yufka ekmek) in tandoors from sunrise to sunset for two/three days in a row. It was a custom to make gozlemes (we call it tandir boregi) for neighbors in the morning. Neighbors used to send their fillings, enough for 5-10 boreks, to the ladies at the tandoor. Three of the most popular ones for breakfasts were "salatali borek" (simply tomatoes, green peppers, onions, parsley, salt and black pepper), "yumurtali-peynirli borek" (just eggs and tulum cheese), and "sekerli borek" (sugar and butter).
Me and my husband absolutely LOVE gözleme. It is one of our favorites. Ever since we ate it in Turkey I've been making some at home like three times a year, with spinach & beyaz peynir filling (thankfully we have a store which sells Turkish ingredients close to where we live). It always takes us back to Turkey ❤ Hopefully this pandemic is soon behind us and we can come back to your beautiful country for real again. Mutlu yıllar! 🎉
I've got to try this!!! I am married to Mexican woman, we have steel Comal or griddles, also, I will use an inverted wok. Thank you for this video. All the best from Oklahoma USA
Thank-you for sharing! I tried it today and it was easy to make the dough. I didn't have any of the ingredients, but I did have Nutella and tried it with that, it was delicious! I will be trying to make it with the meat mixture.
When I lived in Athens I used to visit Turkish restaurants all the time and fell in love with the cuisine (we have many many common things too ) now I moved and there are no Turkish places here so I’m so happy I found your videos and I’m able to make those dishes my own
I have 4 rolling pins! I do remember the early days of living on my own when I was forced to use a wine bottle 🤣, it works well though! Thank you for this recipe today, love it! Also Refika, I have a story for you. Every Christmas in my family we make a German dish from my moms family called Rouladen, but my (Turkish) dad never liked it much because it was dry and not flavourful. Refika, I have been listening to you and learning the theory about how to cook meat, and I applied my new knowledge to my moms old dish, shredding the onion, marinating, using the acid and covering it to cook it came out so good! 😋 my dad loved it 😄 really enjoy learning from your channel and I am sharing it every chance I get! Happy new year! Ayla from Canada 🇨🇦
i just found your channel a few days ago... i had to hit subscribe and start binge watching your channel... you make me want to move to turkey so i can eat everywhere... thank you for sharing your love of cooking with us...
I miss Turkey and Turkish food so much. Our family tries to visit Turkey as often as possible (We are Ukrainian). The best food I`ve ever tasted and the friendliest people I`ve ever met are from Turkey. Best wishes to you! May 2022 bring you good health and incredible success!
I loved the gozleme when in Turkey. Great back pack food. I would buy a few of them without meat so they would last for whenever I wanted a snack on a walk. So tasty. My favorite is the white cheese with spinach.
You guys remain me about my grandma's recipes, next time if you like try two more recipes. First is lightly fried green pepper, parsley, and feta cheese. The second one is feta cheese and eggs. Hello from Las Vegas.
Refika, loved seeing you on UK Masterchef this week. Fabulous! Another recognition of your expertise. The show sent me hunting for your recipe for Gözleme. Thanks for sharing your knowledge in such an accessible way. You bring inspiration and joy to me, and the world.
My husband is Bulgarian and my mother in law makes these pretty often with homemade ‘tvorog’ cheese..can’t wait to try your variations!! Look sooo good!!

Hi from Finland. I were so lazy woman, I did few times gözlemes, lahmachuns and pides with ready yapma and filo dough, sorry. But they were anyway quite good, even wrong doughs. I'm really crazy for Turkish food, truly. I had those times many bough frozen filo and yapma doughs on my freezer, so that because I make them. I'm unfortunately so lazy to bake. But not to make wonderful Turkish food, I love it. In 18 years I visited in Turkey several times, and luckily I got always the real Turkish homefood, only two times I ate at restaurant, homefood is always the best. Thank you for your channel. Sincerely: Mina
I LOVE this channel so much. I discovered it about a month ago and have been binging your videos every day! Thanks for making such excellent content, it's so lovely to see you and the crew cooking something together and then eating it afterwards, like a giant family.
1. Yes to having a rolling pin (actually several, of different lengths). 2. If these recipes set the tone for 2022, it's going to be a wonderful year 😁 3. Burak is the perfect combination of dough skills, hats and smiles 😊😂🧡
Hi Refika! I’ve recently discovered ur channel & fall in love with all your cooking sessions ❤ It’s one of my favorite channel now & can’t stop watching it! Binge watching all morning 😂 Gozleme was my first Turkish food together with manti & pide they served at Istanbul airport lounge when I flew with Turkish airlines! I find Turkish people so generous with food offer to their guests! Love everything about your Beautiful country Turkie & your so sweet people ❤ Thanks for this lovely video btw love ur dan too! On my next visit to Istanbul we will surely drop by your Dan 🎉 Keep it up Refika 👊🏻👊🏻👊🏻
This is what it's like watching the crew prepare delicious foods... I'm eating a reheated McDonald's breakfast sandwich and you guys are making me so hungry for these gozlemes that I had to get a bowl of greek yogurt with chia seeds to fill me up! I'm definitely trying some version of these today 😋
Muchas gracias por las recetas, por favor quisiera saber si se hacen el día anterior si se pueden comer fríos (para llevarlos a una cena fuera de casa) Muchísimas gracias, saludos desde España
I love that Borek was more involved today. His talents with doughs are very inspiring. Great team effort! "All the rest are mine" Bahar you're so funny 😁
Thank you so much for your wonderful recipes. Our Christmas celebrations were memorable because I made Turkish dinner(kebab, kofte, lavash, hummus, mutebel and your chicken pasta). More power and live to you and your team!
I like you all so much. You're doing my style. Easy and friendly. Actually i tried till now just one recipe. Shame on me? But I saved much more. I will try mayby not all of them, but, who cares, i will try them in the future. I have all the world to try! But you're one of my world! Nothing for you, but important for me! Un bacio da Vicenza
I like that you added your cute buddy....I wish I could be in Turkey soon. I love your energy! i have a rolling pin. However I used a bottle for years.
Hi Refica, I am Neeta from India. Today came back from Turkey, remembered you all the time. Really wanted to meet, but did not know how? Love Kapadokia, Izmir, and Istanbul
My all time favourite is gözleme with poppyseed paste. You basically spread plenty amount of poppyseed paste into layers. It's not the filling, it's the flavour of the dough itself. Perfect with feta like white cheese, fresh chillies and of course Turkish tea. 🤤
Happy New Year my Turkish friends. May Allah shower you with Health and Happiness. There is something called Baida Roti we have in India which is similar to the mince meat version with an egg. This is a definite try especially the dessert option, its my favourite. as for the potato and cheese filling we make something called Aloo Paratha and Cheese Paratha. Bahar you have my heart, the sweetest, cutest and the most loving person. God Bless you. Refika I also love you, you are unique with a great flair to connect with the audience. And the dough master you are amazing. Love you guys....
Happy New Year to the whole team! I definitely have a rolling pin at home, but the bottle trick is good for when you are travelling or at a friend's house, etc. I love this recipe. You all make life tastier and happier!
Такие лепешки с разными начинками ,я очень часто готовлю своим детям. Только складываю их по полам. Конвертики с шоколадом еще не делала. Обязательно попробую!)
I love how easy that dough is! I have multiple different rolling pins refika! Different shaped ones with different handles depending on what I'm rolling.
Yes! I have a rolling pin. I actually have 2, so I can share. I also recently found sumac in a local market for the first time. I remembered that you have talked about sumac at times during these fantastic English language videos. I have never used sumac before and if you have a favorite way for me to try it for the first time, that would be wonderful. Thank you so much for all you do and for your beautiful hearts.
I have a rolling pin - but I do not have a Barak to make this dough! I might be able to manage this! Thank you Refika! It looks so amazing - I'd love to try your white cheese!! =]
You 3, I don't know but you make me happy just watching you. I want to visit Turkey number 1 because of you and number 2 because of your amazing Turkish comedy-love story series.. I have not watched your youtube for 2 months, I was so busy.. But now I'm back, I will watch all that I have missed and will definitely try each one.. Love from Philippines ❤
looking forward to see many more tasty vids like these in 2022!!! All the best to al, health happiness and great food!l An Indian proverb: Keep your body healthy and happy and your spirit will stay longer
Happy New Year, Refika and team! You guys are the best and always make me smile. Gozleme is one of my favorite foods from Turkey. The best I had was from a widowed village woman near the historic site of Aspendos. It was so tasty and such a memorable experience, I will never forget watching her make it with such ease. Thanks for bringing the recipe to my home in Texas - can’t wait to try it! Wishing you all the best in 2022!
Happy New Year to all of you! Much love from Prince Edward Island, Canada. And yes, I have several rolling pins. My favourite was my mother's - it's over seventy years old.
I love gözleme! 😍So glad you guys did this one, since I can’t just go to the Beşiktaş market to eat them anymore. Also loved the good, the bad, and the ugly reference. Mutlu yıllar!🎉
Happy New Year to you all!!! 🤗 I love that you always include a vegan or vegetarian option with the recipes you share 🙂 These "hot pockets" look amazing, so clean and fresh and healthy and delicious! I don't have this round dome-shaped pan, but I'm going to flip my cast-iron pan upside down when I attempt to make these, and yes! I do have a rolling pin - a large, wooden old-fashioned one 😁 Watching the love you put into your food is a beautiful thing - thank you ❤
Beautiful! Yes I have a rolling pin. I am thinking of all kinds of other vegetarian fillings including lentils instead of meat. Thank you for always thinking of us vegetarians 😊
Happy New year Refika and company. God’s blessings and more grease to your elbows. Thank you for all your wonderful videos last year. I pray you all do even better this new year. Also hoping I make it to Turkey this year!!
Oh I love this recipe and will make this when you the weather cools down, currently 38C in Melbourne Australia. I made your Turkish kebabs and they are amazing. Happy New Year beautiful lady and I hope and pray that this year will be better. Would you be able to make the cheese you use please. Stay safe and healthy.
I have been reading some of the comments and eventhough we may come from different parts of the world. This is a dish that in many ways we all have. In Mexico for example we have quesadillas. I am drooling...the potato one look amazing 🤤!
We have almost same thing in my state of Bengal, in India. It's called Moghlai Parotha. Except that it has an egg and mince meat filling, and is deep fried. Served with a potato curry. Most definitely a middle Eastern influence, because, the Delhi Sultanat had Turkish origins.
I'm so happy I found this channel and subscribed! Best decision ever! I love Turkish food so much! I was searching for a gozleme recepie, but found pide and even lahmacun! OMG! PURE AWESOMENESS directly from Istanbul! Much love!
Wishing all of you the best of the best for 2023.... Hopefully your business will grow from strength to strength.... And more important I wish you all much happiness.... with love from South Africa
I wish i had the money and strength to visit Turkey ... I'm an American Muslim , it's Ramadan and i bet iftar there is amazing ...

I used to eat roasted poppyseeds as snacks but became a little dizzy afterwards. I wonder if poppyseeds gözleme has same effects.
@@SD-wr8rm I'm not aware of that effect. I never got dizzy after consuming poppyseed to be honest. Could it be possible processed in a different way?
@@mr3673
It was only roasted poppyseeds with salt.
@@SD-wr8rm sorry to hear you can't enjoy it more. I googled and apparently it has a side effect like this.
@@mr3673
Well poppyseeds comes from opium. Maybe that’s why it gives a little dizziness when consumed a lot of it.

Thank you for sharing with me... Happy new year to you as well!! 🤩🎁🎄
Mutlu mutlu yıllar! 😍
Here's to a 2022 filled with moments we cherish always!
Happy New Year to you all!!! 🤗 I love that you always include a vegan or vegetarian option with the recipes you share 🙂
These "hot pockets" look amazing, so clean and fresh and healthy and delicious! I don't have this round dome-shaped pan, but I'm going to flip my cast-iron pan upside down when I attempt to make these, and yes! I do have a rolling pin - a large, wooden old-fashioned one 😁
Watching the love you put into your food is a beautiful thing - thank you ❤
thank you so much! hope you like it ❤️🙏
Turkish cuisine is one of the best
Beautiful!
Yes I have a rolling pin.
I am thinking of all kinds of other vegetarian fillings including lentils instead of meat. Thank you for always thinking of us vegetarians 😊
Tahini cacao and honey! What brilliant mix! Maybe a lil cinnamon too?

I have been reading some of the comments and eventhough we may come from different parts of the world. This is a dish that in many ways we all have. In Mexico for example we have quesadillas. I am drooling...the potato one look amazing 🤤!

We have almost same thing in my state of Bengal, in India. It's called Moghlai Parotha. Except that it has an egg and mince meat filling, and is deep fried. Served with a potato curry.
Most definitely a middle Eastern influence, because, the Delhi Sultanat had Turkish origins.
