How To Make Turkish Gozleme / Best Recipe From A Local Lady

  • One of the best street foods of Turkey is Gozleme. It is kind of meat pie with minced meat, potato or cheese filled flat bread cooked on pan like sac tawa. Kastamonu is very famous by it's minced meat gozleme called "etli ekmek" . I went to a village in Taskoprü region in Kastamonu and meet with Sadiye Teyze. She is famous with it's traditional cooking videos in Turkish and village life videos on their youtube channel filmed by his son Erkan Davulcu.
    I had a great time with them learning so much from her and had fun cooking gozleme together. I am very happy to share this traditional street food gozleme recipe with you.     3 Ingredients Famous Turkish Breakfast Dish "KUYMAK" • 3 Ingredients Famous T...
    Ingredients For Gozleme "Etli Ekmek"
    For the filling:
    1 kg. minced meat
    1 big onion
    about 2 cups lukewarm water
    about 1 tbsp salt
    ground black pepper and red pepper flakes to taste
    For the dough:
    2 cups water
    half cup lukewarm milk
    1+1/2 tsp salt
    about 1 kg or less flour
    More flour to sprinkle while rolling the dough
    A rolling pin, preferably thick
    Sac tawa or big pan to cook
    Vegetable oil to cook

      ... and the technique is so impressive. The teyze said that it preserves onions' moisture; unlike the food-processor. Wow! I never considered our mothers and grand mothers to be seasoned chefs too. 😃

So many traditional recipes, crafts, and crops are in danger of being lost if we don’t make the effort to learn from our elders.     I was so fascinated to see how a Turkish family lives! Such beautiful people! Thank you so much to you and the family that hosted you. It is so important to preserve the old ways. I still cook the way my grandmother cooked and taught me but my daughters don’t. Our recipes are being lost because nothing was written down. We learned by example, much the way you were learning here. Many blessings to the two families!

    I was in Turkey 20 years ago with my Turkish friend and her family. In the village I ate my first gözleme, only with Butter. Heavenly.. I don't know how many I had, but maybe 20 lol

    I love this family. They are making so much traditional turkish food. And i just love the elder womans teknic and system for the foodmaking. And most of her ingrediens are from their own farm - that’s amazing! It’s obvious that she has done it thousands of time.     I just loved this look into a family’s village lifestyle, their interactions, their animals, and of course their delicious food. I lived in Azerbaijan for a couple of years and was invited to a family’s home in the countryside for the weekend. Early in the morning I woke up and wandered into the kitchen, where two older women were cleaning and chopping herbs to add to lunch dishes. Though we didn’t speak each other’s language, it was very companionable to share the food prep and drink tea together. For lunch we had the most delicious homemade manti with melted butter, and I saw the dough being rolled out exactly as you show here. One of my favorite experiences ever!

    This is such a great video!! Hats off to Teyze!! And she added so much salt!!!! I guess the Turkish salt isn’t as salty as it is in Asia. (So everything has to be seasoned in moderation here.)     This was one of the best "cooking collab" videos I ever seen! It was a joy to watch you all having fun cooking together! I loved that the flour came from their own land. I'm also in awe of Teyze's dough rolling skills!! Thank you for taking the time to film, edit, and share with us. These kinds of friendships and bonding time feeds the soul, literally! Hope your hand healed ok, her knives did look very sharp! :)
