Bulgur Pilavı, Bulgur Pilaf Recipe: A Must Try Turkish SUPERFOOD is SO Simple and Delish
Вставка
- Опубліковано 19 лют 2021
- Today we have a great recipe that is one of our absolute favorites. It's important to us both as heritage, and as how healthy and "bereketli" it is. Bulgur means boiled, dried and cracked wheat grains and it comes in different sizes. When it is coarsely ground, we use it to make pilav. Medium grind is usually used to make kısır and dolma. Finely ground bulgur is great for soups, meatballs and veggie balls. To give you a clear picture, if Asia is the homeland of rice, America, the homeland of corn, Anatolia is the homeland of bulgur wheat. We use bulgur in almost every dish. It is nutritious, fulfilling and a superfood so it is a good ingredient in times of famine as well. Today we will be making the ultimate Bulgur pilav the way my dad taught me. It is soft, fluffy, healthy and heaven on earth! Enjoy and leave us a like and a comment if you liked the video. Have a wonderful weekend!

2 cups coarsely ground bulgur
2 onions, diced
1 small carrot, grated
4 cloves of garlic, sliced
2 tablespoons olive oil
1 heaped tablespoon + 1 teaspoon butter
2 tablespoons hot red pepper paste
2 tablespoons tomato paste (alternatively, 200 ml tomato puree)
400 g boiled chickpeas
1 tablespoon dried mint
1 teaspoon dried thyme ( or oregano)
1 teaspoon salt
1 teaspoon black pepper
To garnish:
Pickles
Savory yogurt
• Brown the 1 tablespoon butter and olive oil in a pot.
• Add in the onions and sauté for a couple of minutes.
• After the onions are softened, stir in the garlic and continue to sauté.
• Add the tomato and pepper paste. Use the tip of your spatula to mix the paste with the onion and garlic evenly.
• Add the bulgur, carrot and chickpeas. Continue to stir after adding every ingredient.
• Time to spice up the pilav! Season with dried mint, thyme, salt and black pepper and add 1 teaspoon red pepper flakes, if using sweet red pepper paste.
•Pour in boiling water up to 2 cm higher than the level of the bulgur. It will take around 4 cups of boiling water depending on the size of your pan.
•Add 1 teaspoon butter and simmer for 10-15 minutes-depending on the size of the bulgur- on low heat. Unlike rice pilav, leaving a little water at the bottom of the pan will make your pilav better.
•Turn off the heat and cover with a kitchen cloth and let it rest for 10 minutes.
•Fluff up and serve with yogurt and pickles to level up the joy and eat the bulgur pilav like we do!

A beautiful lady in a beautiful kitchen sharing a beautiful recipe from a beautiful culture. Everything about Refikas kitchen is beautiful.
I agree!!!!!
More than Beautiful and her unique accent makes her adorable 😘
Good thk
For sure.
Great energy and sense of humour. This makes me think cooking is fun - which it is ;-)
I used to eat this when I was a student in Ankara. When I returned home to Bosnia I could not find it in any restaurant. When I saw this I immediately made it because I had all the ingredients. It tasted just as good as in Turkey. Thank you Refika.
I just came back from Side, Turkey and I left with tears in my eyes ...I feel in love with the kindness of the people ,the beauty of the land and the very tasty food..I came home with change of my mood as I had some depression and anxiety...I went to the beach just about every day just to walk along the shore...I miss it so much..and one day I will hopefully go back..The shop keeper I got to know told me I was turning Turkish because I got a dark tan and loved the food..and I am a light redhead and came to Turkey very pail..and now my husband calls me a bulgar monster..LOL I think the Turkish are the masters of garlic..I do love garlic, and my husband does too.. Thank you for making these vids Refika!
And the best bread in the world is in Turkey!!!!!
I finally had time to make it this morning. It’s currently simmering and the whiff of mint when I checked it was heavenly. One tip about the onions. If you’re crying while cutting onions sharpen your knife. Your knife isn’t slicing through it but actually crushing it, releasing the chemical that causes crying.
There is something in her voice that make me relax and enjoy the vid..
Its probably the manliness you feel 😂
I agree her voice is nice ❤️
Same here
I agree with you and her excitement about her food... I just love her video's.... makes my day...
She has the contralto voice.
I am SO pleased I found this channel.
Me too! No regret following Refika & her wonderful team. 👍👍👍
I just learnt the magic of bulgur here in UK whilst cooking for the first time last night. Very economical. Wonderfully tasty. Winner
I came here to learn turkish recipies for my partner, and now i come back for more because i love the flavour and taste it brings
I lived in Istanbul couple years ago and still to this day I am missing that amazing Turkish food. So thank you very much for all your recipes and tips! Cooking it at home brings back many great memories from Turkey and brings smile to my face. Greetings from Lithuania!
Oh my gosh Refika is such a wonderful person.... My grandmother recently passed away and she LOVED to make Turkish food her favorites were the Doner and the Baklava watching Refika makes my 17 year old heart fill with happiness and she has inspired me to go to culinary so i have all the gratitude in the world for this channel
Çok teşekkür ederim Refika!!!!
Ate bulgur for The first time last week in a turkish restaurant and was blown away, im making bulgur as i write this comment, its So damn good
I LOVE this woman! she is such an inspiration;talented, strong, funny and good humored. She is kind (inviting everyone to visit on a trip to Turkey… and you can tell she means it!) intelligent and so giving. I have made the hummus with sumac and cumin and my little grandaughters loved it. trying the pilavi tonight! cannot wait
since you introduced me to the delicious wonders of Turkish cooking, I tried making bulgar. My partner and I are totally hooked! We eat it twice a week now. I’ve always loved food from this part of the world, but Turkish is particularly delicious. You’ve really added so much flavor and dimension to our meals. Thank you. I cherish your videos. Be well. ❤️
Through these tough times my way of surviving is cooking for people who pay me and I make enough to pay basic bills. Your dishes are always a part of my menus and you make it so easy to try them they always turn out scrumptious x thank you 🙏 God bless you x I will make this next x
I love tabouli and this is going to be on my table. I love the way you are so good at telling how to make things. Love from Florida, USA. Carlene Barber. I'm 79 and still enjoy cooking and baking. Just ordered a grain mill so I can make healthy bread for everyone.
First time I ate this in Germany and then in Turkey. I loved this so much that I've bought a packet .. probably it's coarse type. Now I am watching this video to prepare this for the very 1st time. Thank you for the recipe😬😊. I loved Turkish cuisines and the place.❤️
Using Bulgur, and indeed tasting it for the first time ever, I made this bulgur pilaf minus the pepper paste and dried mint, using red chilli powder and fresh mint instead! Everything else was as mentioned in Refika's recipe....and what a pilaf dish it turned out to be!! Wow!! Was just heavenly!! Thank you Refika! Loads of love from India!
Thank you, Refika! I’m learning about Turkish food and love seeing the city as well. The world is full of so many wonderful cultures and people. I wish humanity could learn the lesson that “different” DOES NOT mean “wrong.”
Hi,
I love your recipe for bulgar,I'm British Pakistani and love Turkish food,,I tried making bulgar for the first time following your amazing recipe..and it turned out amazing. Everyone's favourite dish in my house..thank you for your amazing recipe. 😊😊😊❤

A yummy family recipe going back generations, and Roberta Flack. What more could you want? Thank you again Dear Refika and Crew
I just cooked this for my family! I’m in Britain but have a Turkish mother and an English father. I grew up on Turkish food and I love your cooking and my family love Turkish cuisine. Healthy and tasty! Thank you for your inspiration 🥰
We are so fortunate to have your channel.
Love this recipe, thankyou. I cook it each week. I fry off some salmon, flake it, and stir it through the bulgur at the end. With some mushroom/thyme/tamari gravy on the side. Delicious.
I went to Turkey for the first time two weeks ago and this was my favorite meal! Thank you so much for sharing!! Tesekkür ederim❤️ greatings from México🇲🇽
I love the occasional asides to the rest of the crew. Makes it feel more like a family experience, which is what cooking should be
Choc Gazel😊. I met a Turkish Business couple in Cannakle, in Turkey in early 1989. I stayed with them for a speaking English Holiday. 😅😊
I loved them, their family, Turkish food, the people, culture and experiencing Ramadan and Pide bread as well as Turkish Halva.
I wanted to return, but have not yet done so, due to many things.....getting a Degree as a Mature student etc.
So when I watch your channel, at least I feel as though I'm back in Turkey for a little while 😊🎉.
So thank you so much for bringing Turkey to me in the UK, which is so very different from Turkey 😅😂😢
❤ 🤗 Thank you so much for inviting me into your home. Meeting your lovely friends. Hearing the lovely Turkish accent again and off course learning how to cook delicious and tasty Turkish food and Dishes x 😊 Mary
Bulgur is so underrated. It's always been one of my favorite foods. I'm glad my mom was a hippy.
I’ve made this twice in the past month. I eat it with yogurt and pickle juice as Refika and Bahar recommend. It IS a bit of heaven on earth! Thanks for a great new recipe ladies🥰
what type of yogurt would do; greek?
Her voice has some special ingredients in it. It makes me so relaxed and calm
Reminds me of when my Anneanne used to make it except for the pickle juice. You really need the lemon to brighten it. It is still nice to see mint used properly.
Cuando fui, me encantó! Así que me traje mucho bulgur conmigo y muero por probar esta receta que nos acabas de compartir! Gracias!
I’m falling in love with Turkish food with this channel

I cannot eat regular rice anymore so i was looking for an alternative and stumble across this seemingly lovely lady, 😁what a beautiful addition to my cooking..thank you it turned out perfect....it was such fun cooking with you💃🏽💃🏽💯
I just flew on Turkish airlines and they served this dish . I really loved it so now I’m gonna make it . Thank you so much. The only difference is that I’m vegan so no butter for me 😋
Use Earth Balance, Vegan margarine. It's perfect.
Every time I watch your recipe, I find a close relative of it in Indian cuisine. It just makes me say, what a small world!
Pulao/Palav is a staple of Indian diet and watching the Turkish version of it was indeed a pleasure.
Pulao/ Pulav is a rice dish in Pakistan 🇵🇰 too!! So good ... and the same way we let it cook with the cloth on the lid of the pot.
I love everything about Turkey including you. Don't ever stop xx
Well young lady I love your style of presentation and explanation of ingredients .I have recently started cooking levantine and with your help Turkish food I love it will grow my knowledge and techniques so my family will plead and beg me to cook for them now that's a great super power to have showering them with love through food that'll dae it fer me big love from Scotland x
I made this lovely pilaf for dinner this evening. So good! This is another dish that is truly greater than the sum of its parts. I'm always amazed how a few humble ingredients can be combined and cooked to make something so delicious. This is a recipe I will definitely make again and again.
That looks like the ultimate comfort food! Is that the new kitchen? It's lovely.
Don’t get too comfortable. The game has just begun.
I bought fat bulgur in Turkish store in Germany and I didn’t know what to do with it.. now I am excited to try making this recipe.

I'm so glad to have found your channel! I'm from Lebanon and given common history, many of our recipes are very similar, including this one. We also eat tomato bulgur with yogurt! Will try your version, though, looks delicious
Bahar’s enthusiasm for the food always makes me smile ☺️

Edit: Tried it! Super delicious! I actually made it without any oils and butter for the whole food plant based vegan crowd - turned out really well! Thank you for this fabulous recipe!

When I lived in NJ my Turkish friends cooked for me. But since I moved to Hawaii, good Turkish food is hard to come by. Since I found your videos they help me to cook my own great Turkish food. I love this recipe a lot. Simple, tasty and healthy! Thank you!!

Thank you, Regina! I love your videos. So many great recipes. I was looking for a recipe for bulgar that was close to my late mother’s. This brought her back to life for me! Thank you. ❤️
I had bulgur for the first time yesterday. No chickpeas, carrot tomato or butter just onions with lots of garlic, vegetable stock, black pepper and FRESH mint and thyme from the garden. Wonderful!
Greetings
So is there need of soaking before or not ?
I LOVE bulgur, it almost feels like the "wholemeal" version of rice. I ate it a lot as a rice substitute because it has fewer carbs, more protein and makes you feel full longer.
It goes really good with creamy Greek yoghurt and roast chicken. I'll definitely try this recipe.
Lots of Love from Sweden!
Greek Yoğurt is fake. There is only Turkish Yoğurt. Yoğurt was discovered by Turks
I substitute Bulgur for all rice dishes, no more rice, with experience it will test better than rice. When cooked with broth it is testy.
@@valleyOFwaryou think turks invented curdling milk?! 😂 Ridiculous.
Hello from Italy. Discovered your channel a few days ago. Thank you sooo much!
Bulgar really is a wonderful item to put in soups, stews in stead of barley, use as a breakfast, or in a pelf like this. Its so versatile. Just realized I have none in the house, must go get some tomorrow, going to make a beef stew + this will compliant the beef wonderfully.
I love to see you cook you make it so easy for people who doesn't understand how to cook your culture food thank you it been a joy I could now cook this for my husband
Rafika I love all your recipes 😍 I’ll definitely try this. My mother is Armenian she used to make it for my dad because he loved it. It was a little different but I can’t wait to make this for her to try. Thank you.

I am Iranian. Live in USA almost all my life. Came to Turkey and stayed for 3 months. I am in love with Turkish capture. Your recipes. You are great.
I found bulgar today in my local supermarket. I’m excited to try this recipe because I’m looking to incorporate more vegetarian dishes into my life. We all need to do our part in saving the environment. Thanks for sharing Refika!
Rafika hi, I am from India. We call this as Daliya. We add some lentils, and also add, peas and potatoes. We also make a sweet version of the same with sugar and Ghee and lots of dry fruits. But when we make the spicy one we add ginger garlic paste, some cloves. Pepper and cinnamon .
Wow !!
Red or green lentils?
this is not Daliya Mr. Pant. I know Daliya and tasted it. Dalia and Bulgur both are similar in the sense that both are wheat-based whole grains. The difference is that Bulgur is mostly parboiled before drying and it retains a bite, while Dalia is soft and easier to digest. Turkish bulgur is the main meal ingredient while Dalia is mostly served as a breakfast item. I lived in india like 8 years, so i have the idea.. :) Thx.
@@evrensahin165 Daliya is broken wheat and we get it in many sizes. I mean the one which is thicker and the one which is fine. The thicker one takes a long time to cook. We make salty daliya where we add dals to it. We add vegetables like carrots, beans, onions, peas. This is had for lunch or dinner.
@@serseriherif9530 any lentils .. but many add mung or green gram.. or red gram or masoor..
I love this , my Turkish brother in law makes it for me , and I’ve made it a few times , it’s delicious
Well, I made this today with normal hot pepper paste and it was spicy and yummy! Thank you. I can see why you cool it down with yogurt. Thank you very much. I also made it with wholemeal bulgar wheat. It took a bit longer to soften but was just as yummy. Thank you x
This is an amazing dish that I will definitely try. Love the hand made plates too. FYI in Ethiopia we also say Berekat for the same situations.
I am indian who lived in israel for 6 years. I made this bulgur pilav very often- my recipe was a favourite among my friends too! My recipe uses little less onion and butter. And i used to add a tiny pinch of cinnamon powder towards the end like when its 80% done.
Ahem...this one's from Turkey, not Israel. So I think you're trippin', homie.
@@MyMusicHarbourage she never said it was from Israel, just that she lived there....
@@TheTamago I realized that, but she did try to imply that the dish is from Israel. However, it's Middle-East!
@@MyMusicHarbourage you sure ? But yeah, this dish is definitely not from Israel, as you said, all the middle east is sharing it
