Great question! The sugar is mainly used to balance the acidity in the tomato sauce. You can certainly leave it out or reduce the amount, if you wish. Enjoy!
the Italians say "you want your pasta water salted to taste like the ocean" ..... you must salt the water quite a bit, if you don't, the pasta will not have flavor. it's like anything else, salt brings out the flavor in EVERYTHING. Don't be afraid to salt your food while cooking. some people wait until the food is on their plate to salt - then it just tastes salty, any chef will tell you that.

Hi laura, you definitely could substitute the diced tomatoes in this recipe for a vegetable puree or your favorite diced vegetables with some liquid, such as stock or wine. Perhaps you might like using only half of the diced tomatoes and adding grated onion and zucchini to make up the difference? Hope this helps, enjoy :)

Thank you for your question, Juliana. Are you asking if you can skip the ricotta filling? The filling gives nice creamy consistency, body and volume to this lasagna. Without it, the lasagna will be pretty flat - more like cheesy noodles :)

Why do so many people put the onions inside AFTER the meat? That is totally wrong. You have to put the onion in first, make it nice and soft, so it turns sweet and loses that onion smell, then add meat. This way you end up with chunks of onion in meat.

Number one, lasagna doesn't cook in the oven for 1 hour, number two,the point of sweating the onions BEFORE the meat is to make the meat sweet after you put the onions in without having that strong onion smell. Ask any european cook how he does it, and you'll see how all those dishes are originally made. You obviously have no clue about real cuisine. This looks so good. I don't think salting the water like that is too over the top since it was a large pot and you drain the pasta and rinse it too. It just gives the pasta a flavor. I however would reduce the amount of salt in the remaining part of the dish since the meat was salted and the cheese is salty on it's own as well as the canned tomato paste and diced tomatoes. I actually would probably use fresh tomatoes and cook them myself instead of the canned ones, unless I could get them salt free; but I would still use the tomato paste.
Thank you for your question, Anish. Tomato puree isn't quite as thick as tomato paste, so the sauce could be a bit runny. Otherwise, it should work fine as a substitute. Enjoy!

I am making Lasagna for Christmas this year! I have around 18 people to feed, so making one regular and one gluten free lasagna. I like to keep my meat mixture separate from the tomato sauce. I used canned tomato sauce with basil. So when layering top your tomato sauce with a ground beef mixture, before adding your next layer. Merry Christmas!
7:43 Noooooo! 1 hour at 375F is too long and will burn the bottom if placed on the middle rack. Instead, bake at 350F for 45 mins and it will be perfect.

1 1/2 tea spoons of salt
2 six ounce tomato paste
29 ounce diced tomatoes

boil salt water. add 12 lasagna noodles

This looks so good. I don't think salting the water like that is too over the top since it was a large pot and you drain the pasta and rinse it too. It just gives the pasta a flavor. I however would reduce the amount of salt in the remaining part of the dish since the meat was salted and the cheese is salty on it's own as well as the canned tomato paste and diced tomatoes. I actually would probably use fresh tomatoes and cook them myself instead of the canned ones, unless I could get them salt free; but I would still use the tomato paste.

Thank you for your question, Anish. Tomato puree isn't quite as thick as tomato paste, so the sauce could be a bit runny. Otherwise, it should work fine as a substitute. Enjoy!

I am making Lasagna for Christmas this year! I have around 18 people to feed, so making one regular and one gluten free lasagna. I like to keep my meat mixture separate from the tomato sauce. I used canned tomato sauce with basil. So when layering top your tomato sauce with a ground beef mixture, before adding your next layer. Merry Christmas!

Noooooo! 1 hour at 375F is too long and will burn the bottom if placed on the middle rack. Instead, bake at 350F for 45 mins and it will be perfect.
