Italian-American Lasagna with Meat Sauce and Ricotta

  • This recipe is for how to make Italian-American Lasagna. This is the one that many Americans know and love. There are a couple of tricks to making a perfect lasagna that's not runny and easy to assemble. This classic lasagna recipe with meat sauce is made with a hearty ragu, ricotta, mozzarella, and Pecorino Romano cheese. Make sure to let the lasagna rest for at least 30 minutes prior to eating. Enjoy!

    INGREDIENTS:
    -4-5 cups meat sauce
    -1 pound lasagna noodles - Dececco brand works well
    -1 pound mozzarella cheese - sliced
    -1 cup Pecorino Romano - grated
    For the ricotta mixture:
    -1 pound ricotta - drained overnight or for at least 2-3 hours
    -1/4 cup parsley - minced
    -1/4 cup basil - minced
    -2 eggs
    -1 teaspoon kosher salt
    -1/4 teaspoon black pepper
    INSTRUCTIONS:
    1. Bring a large pot of water to a boil and add 2 tablespoons of kosher salt and a touch of olive oil to it. Boil the lasagna noodles (work in batches) to very al dente (about 4-5 minutes). Scoop out sheets with a mesh strainer or pasta spider and shock in cold water. Lay flat the lasagna noodles on parchment paper or clean dish towels.
    2. In a 9 by 13 (or 10 by 15) baking dish place a drop of olive oil and wipe the bottom and sides. Next add a thick layer of meat sauce, completely coating the bottom of the baking dish.
    3. Place 6 lasagna noodles on the first level (they should slightly overlap). Spread a thick layer of the ricotta mixture onto the noodles, then layer 1/3 of the mozzarella, another thick layer of meat sauce, and finally 1/3 of the grated Pecorino Romano cheese.
    4. Add 2 more layers to the lasagna. On the top layer just add the sauce, mozzarella, and Pecorino Romano.
    5. Cover the lasagna with a lightly oiled tin foil cover. An even better way to cover the lasagna is to place parchment paper on top of it, then the foil.
    6. Bake the lasagna covered at 375f for 45 minutes in the middle of the oven. Remove foil after 45 minutes and bake uncovered for 15-20 minutes more until the side noodles are crispy and the cheese is bubbly. Enjoy!
    NOTE: Let the lasagna rest at least 30 minutes before eating. This will help it settle and not be runny.

    This is the way my mother always made Lasagna. The only thing we did differently was use oregano instead of basil. To this day I'm not a big fan of basil & it's slight licorice flavor. Lasagna was always what I requested for my birthday dinner (I also love Eggplant Parmesan) but Lasagna won out most years. I never heard of using bechamel sauce until the food network became a thing. Maybe because I grew up in NJ all of your style of cooking is so wonderfully familiar & heartwarming for me...

      I try to make the food that people who grew up in the tri-state area will know and love. I'm of course grateful when others find the channel and enjoy it, but I do laser focus on this area of the country.

    This is a pretty good way to use some leftover Sunday sauce (also your recipe) that's been sitting in the freezer for a while; I added a pound of ground pork to the leftover sauce to make it meatier, and it worked out nicely. Draining the ricotta is super necessary for a non-soupy lasagna, thanks for that particular tip.

    Fascinating, in the UK/Europe- the Béchamel is the standard Lasagna recipe. Never thought to use Ricotta and sliced Moz. And the meat sauce as the final layer? This is amazing 😂😂👍

    I was hoping you’d upload a lasagne recipe 🤤 This looks awesome. I’ve only ever made lasagne with a bechamel sauce and no mozzarella.     I've just come across your stuff man and I love it. Very laid back and no frills, just all about the food. A lot of the recipes remind me of the stuff I've had growing up (despite being Mexican instead of Italian, my parents working in Italian restaurants when they first came to the US rubbed off on them).

    Another odd thing about my Naples born and raised grandmother’s recipes. My mother told me she added some, I don’t know the amount, of cottage cheese to her mixture. Again, her lasagna was some of the best I’ve ever eaten, better than the lasagna served at my uncle’s favorite Brooklyn restaurants and my favorites in Baltimore’s Little Italy. But it’s something that with as many people that I have spoken with, none of them have ever heard this. Thanks for your videos, which I thoroughly enjoy, but I’m off to the deli to get started on my thick sauce, or “gravy”.

    My family for the first time since the start of COVID had a big get together and I was supposed to make dinner for everyone. I tried a double batch of this recipe with as much parsley and basil I could stand to chop, and a homemade thick meat sauce like you suggested and it was unbelievably delicious. To anyone looking to try this. Do it, it is completely worth the ingredients and effort. Even my brutally honest Nonna loved it. The one thing I did different was I broiled the top with the cheese for the last 5 minutes. I don’t know if it made it taste better but it looked a little nicer. With the store bought roasting pan it came to 14 1/2 lbs all together. So thank you for sharing this wonderful recipe and so many other great videos and keep up the great work!

Broiling the top is always a nice touch. The crispy edges are the best! I'm not sure why I didn't say it in this video, but I did include it on my website. 14.5 pounds is a good amount. About 6 servings in my family haha. Really glad you enjoyed it and that it got your Nonna's seal of approval too!

      OH MY GOD!! This turned out EPIC! This is my very first time making lasagna and it is the very best I have eaten. I am 43, and absolutely adored my mother's lasagna, which I now realize was kinda shortcutted a bit, this full method is the best pasta I have ever eaten (this is my first time ever, remember lol). I followed your recipe to a T besides a few extra spices here and there. That Ricotta mix is GOLD. I have seen a few guys and their mixes, but this particular one made my wife sing your praises, Jim. Things were pretty fantastic in our household this dinner, I have you to thank for that. This was epic.

      If you want to try something different try cottage cheese. You might realize that it give the lasagna a lighter taste that allows more concentration on the sauce and other cheeses that the ricotta can kind of put in the back burner.

    I made this receipt tonight. Words cannot describe how good it was. The only deviations I made to the recipe were 1. I used Victoria brand marinara instead of a homemade, 2. I used ground beef and mild Italian sausage (because I couldn’t find ground pork) and 3. I used a different brand of lasagna noodle, but I doubt that had any impact. Absolutely the best lasagna I’ve ever eaten.

      @@SipandFeast -- I'm really enjoying your channel also! Wish I had discovered it much sooner, six months to a year earlier. I have been constantly hungry since a hospital stay in the second half of September 2020, when I lost 70 pounds, dropping to only 130 pounds in early October 2020. Your recipes seem to be just what I need. My Mom and younger Brothers have been restricting my diet, thinking I was an _'undiagnosed diabetic'_ and therefore _'didn't need'_ to eat any of the dishes I craved. They finally removed the restrictions, or at least loosened the reins a bit, allowing me to cook for myself on Mondays, Wednesdays, Fridays, and Sundays. So, my weight has improved to the ~145 pound range, still pretty slender at my 6'-1" height. All day I dream about food, though there are certain dishes I have never liked... Okra, Turnips, Squash, Rutabagas, Radishes, Peppers, and the like. I've always adored Italian Pasta dishes, though. Thank you for sharing!

    Loved this video !! A Suggestion for something different for you to
    make is Cappellin Aragusta which I'm told is a Blush gravy with sundried
    tomatoes and Lobster over Cappelini. Not sure of my spelling of this
    but the description is what the Chef said it was. I used to have it
    when I lived in NJ but now that I'm in Texas it's impossible to find.

    No one’s gonna know. No one’s gonna care….. it’s lasagna. Even bad lasagna is still LASAGNA!!! Try your best, and we will know how great it is. Best dish ever.

    Hey Jim... Started watching your videos recently and I love it... I used to live in the greater New York area and I really miss the food...     😱 WOW! I like how to use the left overs I could make
    MORE for hubby for dinner & he'd LOVE IT just as good.

    This looks exactly like mine. I use a little nutmeg, cinnamon and sugar in my ricotta (with about 1/2 dozen other cheeses) mix. Mmmmwah!

    Sounds yummy! I just put dry noodles in my lasagna...add maybe a half cup of water...and bake a little longer. The noodles absorb the water and all the juices and they cook perfectly!😍😍

      @@SipandFeast for a no-boil method, do you prefer using noodles labeled “no boil”, or use the regular lasagna noodles without boiling them? Do you have any other tips for a no-boil method?

    Exactly how my mother used to make it. The toughest part is the noodles which you perfectly explain. Lots of people in advertently just fill the pot with noodles and then they stick like crazy you need preparation and patience for that part do it right and you won’t have any regrets one question I do have is regarding make ahead can you make this and either freeze it or cook it two days ahead of time thanks

    You should add nutmeg and a little sugar to your ricotta ,omit the pepper , add fennel to your sauce and meatballs, when you make meatballs
