    I save all my veggie scraps in a bag in my freezer. Once a week I make a homemade veggie stock in my instant pot. I add the frozen veggies and any other veggies that need to get used. Then I use that stock in all my recipes for the week. It's free, saved on waste and it's healthier than the store bought stock or bouillon cubes, in my opinion.

    I'm so grateful you're doing budget meals. I'm about to have a baby and since I work in the resturant industry (a vegan restaurant) I don't get paid maternity leave. I got an instant pot at my baby shower and I'm so excited to try these recipes! Cheers to pinching pennies!!!

      Hi Kathryn! I'm glad the budget meals are helpful for you! I hope that one day all employers in the US will be required to provide paid parental leave...but until that day, I hope you enjoy getting creative in the kitchen and with the instant pot!

    I have a tip about tinned tomatoes. Apparently it is best to buy plum tomatoes and chop them yourself than buy pre chopped as the quality of the tomatoes are better. Makes sense when you think about it that they throw odd bits of chopped tomatoes together x

      Interesting! But food grown in Europe (and I assume australia and NZ) is subject to more stringent regulations so you probably don't have as many problems from big factory farming and agribusiness as we do here. But yes, the whole foods in-house brand is quite affordable for organic products!

      Idk why but I don't like them either. They're not very aesthetically pleasing to me, I just feel like red or other colors have more flavor, and in my mind I'm like "they must be trash if they're 72 cents and the others are over a dollar 🙄"

      Wynona 7 Yes, they are terrible. Bitter. You know that green peppers are just regular peppers, just picked earlier? I mean, why bother?

    I wonder if subbing garbanzo beans for the lentils may make it taste more like a minestrone. 😋 🥣

    Looks amazing! Just ordered your book and the Instant Pot! For the lentil stew, could you substitute the cabbage with cauliflower?

    Just a tip. I find it is cheaper to buy nuts or oats in bulk and make my own nut milk or make my own oat milk, instead of store bought plant based milk.

    • @RainbowPlantLife
      @RainbowPlantLife  5 років тому +1

      You’re so right about that, especially oats which are really cheap. Almonds are pretty expensive here so I don’t know how much money I would actually save lol.

      RainbowPlantLife I don’t even use almonds. Too expensive. I usually use cashews or pecans. Sometimes walnuts.

    Thanks for the great recipes but around these parts Whole Foods is one of the most expensive places to buy food. You can just about double the prices for all the examples you show. The good news is that I can buy all the ingredients at the prices shown from other stores. I really want to try that Mexican rice and beans and the lentil soup. Love all veggies including green peppers.

      Hi there! Yes, the price of groceries at various stores will certainly depend on where you live. Here, in NYC, whole foods is one of the more affordable stores, at least their 365 line is. I'm glad you find these ingredients at an affordable price at other stores in your area, and hope you'll enjoy the recipes!

    Quick question! Can I use regular coconut milk instead of "lite" coconut milk for the vegan queso? Thanks so much Nisha!!

    • @RainbowPlantLife
      @RainbowPlantLife  5 років тому

      Hi dear, yes you can! It might be a bit thicker than expected, so just add some water as needed to thin it out! And feel free to email me or DM me on instagram if you have future questions - I tend to see those more easily than comments here (which get lost sometimes). Happy cooking!

    I have book on my Amazon Wish List except that I still need an instant pot. I have a multi cooker but it doesn’t have the pressure cooker feature. I’m assuming the recipes will still work, but just take longer?

    • @RainbowPlantLife
      @RainbowPlantLife  5 років тому

      Hi Patty! That makes me so happy to hear :) I haven't tried using a multi-cooker so I can't say for sure, but based on my research, there are a good number of recipes in my book that can likely be converted. Hope that helps and thank you for the support!
