Gochujang is a mild spicy - I’d say definitely give it a go! You can always add a touch less :) The gochugaru (Korean pepper flakes) is spicier though! Again you can just add less or omit.
One year later, still the best recipe on UA-cam for this and still making it. I hope you make some new vids soon!

How is this cold noodles? Is it because it is served cold or am I missing anything?
Since the noodles are washed in cold water to make them chewy and not cooker again, the whole thing comes out at normal/alightly cold temperature.
Is there a replacement for rice wine vinegar?
You could also use apple cider vinegar 😊
Can I use instant ramen noodles?
I'm not the poster, but yes! Angel hair pasta works really well too, it's not authentic but it is delicious.
