🌼Mul-Naengmyeon Korean Cold Noodles
Ingredients
For the Beef Broth
3 sheets of 5”x5” dried kelp (dasima/kombu) amzn.to/2kKKTg8
18 cups cold water
1 1/2 lb beef tri-tip or brisket
1 large leek, cut into half and wash every layers really well then drain
1 medium size onion, peeled and cut in half
4 slices ginger
3 bulbs of garlic, cut in half
5 to 6 dried shiitake mushrooms
1 tbsp black pepper corn
3 tbsp rock sugar or regular sugar
2 tbsp Korean kimchi sea salt or coarse sea salt amzn.to/2mNyYLC
1 cup soju or rice wine
1/4 cup Korean soup soy sauce or light soy sauce (light in color, not the sodium)
2 tbsp dasida, Korean beef bunion or beef bunion amzn.to/2tWa6XY
For the Pickled Radish (Naengmyeon Moo)
1/2 cup sugar
1/2 cup white distilled vinegar
1 tsp fine gochugaru or paprika
12 oz Korean radish, moo or daikon, sliced paper thin by mandolin or vegetable peeler
For the Assemble
Dongchimi, Korean water kimchi juice, optional
Naeyngmyeon noodles amzn.to/2N9two4
julienne cucumber
sliced beef from the broth
hard boiled egg
sesame seeds
Honestly, the best part of every video is Jacob eating with Seonkyoung at the end and having a ball of a time

What the dude said is 100% accurate. I tried these in Korea three years ago. Thought the idea was weird af. But I've literally been craving them since then and have only been living places where I can't find them. So thank you so much for taking the effort to show me how to make them!
They do have "instant" Mul naengmyeon kits(with the nooders and condensed beef broth) in most Korean or Asian markets. In fact, I find it difficult to get just the nooders by themselves. The kits are NOT as good as what you get in restaurants, or homemade, but I'm totally addicted to them, and if you've never had the real thing, it might help you decide if you like it enough to make it from scratch. Also, when they say its served cold, they don't mean "not hot" they mean cold. Some places serve the broth partially frozen, like a slushy, which I like.
Also... BIBIM SAUCE!! I like Mul naengmyeon by itself, but I LOVE it drenched in too much bibim sauce.

Yes, it is alot of work. Lol.. I made the soup stock and i was pouring it out and i realized that I didn't have another bowl underneath. Duh... I caught it before it all poured out. Lmao..

It is common that Koreans make Mul naengmyeon at home specially in your mother generation. some youngs still do this as well. a dish of this usually costs around US$7-$15 in South Korea depends on restaurants. (average price is 13,000 KRW which is equivalent to US$12 in my place; Seoul). Before eat this food, eat boiled egg is necessary idw tho. please be aware that Dasida is a kinda MSG which I hate to use for my food.

I had the BEST spicy naengmyeon in Los Angeles and I seriously need to go back just to eat that again 😭😭😭 I remember they topped it off with a lot of crushed sesame seeds and OMG, that made the biggest difference 😍😍😍

I was like Jacob at first questioning why Korean would eat cold noodles? Makes no sense at all, because it looks so plain. But boy oh boy when I finally give in and try it I was instantly hooked. It’s so good. The granny that serve this cold noodles to me explain that this dish was served in the fall or winter only because Buckwheats was harvest in the fall only. But now you can eat it anytime ❤️

I make this recipe once a month and it is so much better than what you can find in the restaurants. In the restaurant they put plain water ice cubes in the bowl rather than frozen broth. Definitely worth every effort ❤️

Can you PLEASE do a video on Hwe Naengmyun? I looked EVERYWHERE online and can’t find any recipe on how to make the delicious slightly sweet and spicy marinated Hwe fish! I can easily get this at most Korean restaurants that serve naengmyun but no one makes this at home??
I used to eat this in Korea in the summer. It was one of my favorite dishes. I wanted to make it and thought... oh yeah, vinegar, salt, noodle, ice...lol...boy was I wrong.
