    I made a glittering jewel jelly candy Kohakuto ~
    I wanted to taste it, so I used an elder flower flavored drink instead of water.
    I used a little bit of pigment to make it soft and transparent ~ * ^^ *
    When drying, it seems to dry well only in a well-ventilated shade ~
    It's like a hard candy on the outside and jellies on the inside.
    I think it's really pretty even if you make it in various shapes ~ * ^^ *

    ▶ Material
    300 g of elder flower & rhubarb flavored drinks
    Agar Powder 7g
    500 g of sugar
    Food coloring
    ▶ Recipe
    1. Apply cooking oil to the mold.
    2. Add elder flower flavored drink and agar powder to a pot and boil for 5 to 6 minutes until the agar powder is dissolved.
    3. Add sugar, boil for 5-7 minutes on medium heat, strain and pour into mold.
    4. Mix food coloring to make color and harden in refrigerator for 2 hours.
    5. Cut out of mold and dry naturally in shade for 4-6 days.

    7g Agar powder
    500g Sugar
    Food coloring

      Put some water in a baking tray and then put the plate with the drying candies inside, just like a little island.

    My mom used to make this a lot in rainbow colors. The outer layer of dried agar (what we called this) is crunchy because of the sugar. We usually make a huge bunch of this only on special occasion because of the long drying process. Brings back my childhood memories :)

      @@tomvs4914 I haven't tried them yet but I think you can storage them for around 2 weeks because of the high amount of sugar.

    I followed the recipe and my kohakuto came out delicious~!
    I substituted the rhubarb and elderflower beverage with water though and added 1 tsp of strawberry extract for flavoring.
    My family and friends loved them~😊

    Agar-agar kering (dry agar) in Malaysia. People usually make this during Eid festival to serve as candy for visitors at home. Elders like to make it :)

      You can put it next to a dehumidifier for it to dry faster.

      You can eat them without drying, too. They'll still have their distinct jelly texture but won't have the crunchy shell. They're yummy either way.

      I wonder if white grapefruit juice would work? That's a very light color and is nice and tart. Might need to give it a try, and see if I can cut the drying time with a dehydrator.

      Most soft drinks work so long they're not dairy based. A pinch of Citric acid can also help change the flavour. Experiment and see what works for you.

    I just made this ! now I'm waiting for them to dry ❤️ I used a green tea and elderflower flavoured beverage without added sugar. They don't look as beautiful because I only have red, orange and green food colouring 😖

      🤣 aaaa heck i forgot to update- we made it and it was delicious :DD i liked the peach flavoring a lot. was a lil hard to color it though since the juice has some color to it ;-;
      ps- imagine if i did dry it for 2 years tho.. itd be rock candy by that point 👀

    My head thinking "if these candy were made in medieval era, what would the children think?" (Cady shop exist, but very rare, and expensive, probably only noble can buy candy) just imagine children of said village open the shabby looking shop's door and presented by many colorful candy in all shapes and size, being put in jars and wooden boxes. How would they react?....

    琥珀糖ってやっぱり乾燥する前のキラキラした状態がめっちゃきれいだから、琥珀糖を作る動画とか見てると乾燥して白く曇ったのはやっぱりキラキラしてるのより劣っちゃうなっていうのを感じてたんだけど、これはそれがない。曇ったほうが雰囲気が出たような気がするけどなんでなんだろう?彩度が低いのと、あと若干だけど黒が入ってて暗いのかな?かわいいな。琥珀糖というと鮮やかなものしかあんまり見たことなかったからこれはちょっと自分の中で革新的なような。すごい良い👍

    Just boiled longer until the big bubble appear and it can dry faster just in 10-15 minutes but you need to work faster too before the liquid harden

      i think you can use anything you like...maybe lemonade with st.germain (elderflower liqueur added) but try using a not so sweet one cos 500g of sugar can make the jelly really sweet already. (or add some lemon juice)

    I want to make this but the only elderflower drink I can find is alcohol, nevermind elderflower and rhubarb. I guess I would have to do a different flavour but elderflower and rhubarb sounds good.

      Ir Lee yes!of course we have this! Older people usually making this for Eid celebration..but now,there is only minority out there want to continue the malay tradition to making this "agar agar kering".😅

    Can I substitute agar with gelatin powder? Do I need to use the same amount?

      Nandini Ghosh Save yourself a headache! Do not use gelatin from personal experience. I knew full well that gelatin wasn't recommended but I decided to test it out to see what would happen and it was terrible. It was almost a slime texture and completely inedible. Agar powder is the way to go, and are easily found in large asian supermarkets! Also, watch out for the Golden Coin brand. Don't be fooled by the cheap price with the seemingly large amount of agar powder in it. It's cause there is a lot of sugar mixed in it already. Good luck trying to separate the agar and the sugar. Fat chance it's not even the right amount of sugar to begin with if you happened to use it.
      Those are my tips! Spend a little $$ to save a little $$ if you know what I mean ;)

    The texture look like french "pâte de fruit" but it sound really creaspy when you eat it! Relly surprise ! Its beautifull and look so good!

      Maybe you could put it in a normally cold area like the fridge or in a cooler with little ice so it’s not too cold

      Just check and break one open after 3 days if they are a good consistency inside you dont have to wait more :p

      If it's too humid where you are you cold try putting them in a food dehydrate or an oven on the lowest heat. I wouldn't recumbent the fridge because it's also a very humid environment.

      david chang if you reduce the sugar it might not crystallize enough and you won’t get the crunchy effects!

      What good is reducing it gonna do??? Just dont eat too many of them. Reducing the sugar means they wont solidify into the right texture.

      Well these are considered treats, so you're not supposed to eat a lot. They're supposed to be shared between family, friends, neighbors. If you properly reduce the ingredient amounts though, you can make small batches for yourself and a couple others. Happy cooking!

      별다 죠는 7일 넘어서 거의 10쯤 됬을때 다 말랐어요! 집안 습도나 온도 , 채광의 영향을 받는것 같더라구요ㅠ

      저는 그늘지고 서늘한 방에서 말리기는 했어요! 근데 어떤분은 햇빛에서 말려도 잘마르신다는 분들도 있고😂 아무래도 건조하고 그늘진 곳이면 더 잘 마르지 않을까요....!

      웰치스 포도 맛으로 만들었는데 원래 보라색이었다가 햇빛에 말리니까 색이 다 빠져서 투명색이랑 파란색이 되었어요 ㅠ ㅠ 그늘진 곳에 말리셔야 할거 같아요...
