As a child I would look at pretty sparkling rocks and think "It's sad I can't crunch on these" as soon as I saw these candies as an adult I immediately purchased them. They are *extremely* fun to eat.

This reminds me of how liqueur candy is made. You heat the liqueur you want to use, dissolve sugar into it, and pour it into a mold made of corn flour. The molds are made by pressing shapes into a bed of corn flour (or corn starch). As it cools, the sugar crystallizes on the surface of the liquid, forming a shell, just like it did in these things when they dried. The resulting capsules can then be taken from the mold and covered in chocolate.

We have crunchy jelly in my country too! They would make it out of flavored syrup or sweet herb juice (Ex: Chrysanthemum) but they only do it in cubes or small flower molds. Seeing them as crystals now, they're so pretty!

looks like the difference between the really fancy ones and yours is the fact that they use different shades of the color, adding whites and grays to it to make it look more natural.
