I don't belive that is exactly the problem. I made mine with dulce de leche too and it was perfect. But her's looked way too thick. I don't know if is the brand or quality

3. For following Alvin's lead and using a cake pan. My personal preference and experience, upside down cakes or just plain cakes with fruit, taste and turn out better baked in a seasoned stainless steel deep skillet or cast iron .

Dulce de leche is not caramel, is more like condensed milk heated up. So, that was a mistake, if you want to cook sth with caramel just use caramel and not dulce de leche
