I tried it a while ago when the tasty video came out. I cooked half of the dough after giving it 2h in the fridge, and the second half the day after (never tried 48h). The 24h cookies tasted better! But the 2h ones were good as well, it's just that the 24h ones tasted more 'rich', and you could taste the butter a little bit less. They also were crispier and spread better whilst cooking. I'm guessing they would've tasted even better after 2 days But I never had the patience. I always do it this way whenever I make cookies, a batch for that day, and the rest for tomorrow xD

But it's garbage nutrient-wise. You could do two scoops of protein powder, 100 grams of egg whites, Greek yogurt, baking soda and you have good pancake batter.

The butter was burnt so...like when you dry roast nuts in a pan as soon as you think "just a little longer" TaKe It OuT because from here the remaining heat of the pan is enough to burn it in one second, straight into a bowl and continue working with it and when you add the ice don't be afraid and keep stirring so that the stuff doesn't explode onto your skin...that hurts, of course it will make sounds but don't get irritated and keep on stirring. But the end result was very pleasing to the eye. Good job

I did do Alvins cookies, I did use a tablespoon of cinnamon instead of the espresso powder due to my sencitivity to caffeine. But jees, so good! I also made the cookies half the size and they are still big in Swedish comparison. ❤️🍪🙌

It took me two attempts at the toffee. My first batch I was so scared of overcooking the toffee that I undercooked it and it was soft and chewy: Happy Accident, I added peanuts and got homemade paydays!
When making the toffee make sure the temperature of the sugar and butter is around 289 - 291 and that's the right temperature for toffee for you to take it off and it being cooked. Edit: accidentally put the comment through before I finished my comment

I did the 2 Hour cookie just before I watched your video. In the recipe, they wrote 12-15 min in the oven, but they got too dark so I changed it to 9 min and now they are perfect. In Germany, they are different settings in the oven like circulating air, Top and Bottom heat, etc.. I had it at circulating air first (like in the video), but they got dark really quick so I changed it to Top and Bottom heat. I hope this helps a little bit even if the cookie isn´t mentioned here.

Yeah and id make like 3 months worth in one go instead of one a day for 2 two weeks. Like if im spending time browning butter and all that nonsense im making a day of it and stocking up the freezer cause itll take me 3 months to want to look at the kitchen again after that. @YOURS TRULY, ROHINI Well if you buy moderate to high quality products(ie. Salted Beef from a local deli), there is a noticeable difference, especially with meat and cheese(although the butter substitutes hold up well.)
When you age cookie dough you do so in the refrigerator not the freezer. From my research, the primary action of the aging process is to allow enzymatic reactions to take place that break down the large carbohydrates into smaller carbs with different flavor profiles much like the Maillard reaction. If you are freezing the cookies you are arresting those reactions. There are other benefits to aging as well such as allowing the dry ingredients to become fully saturated as well as a bit of a drying to take place to concentrate the flavor. Give it a shot and see if there is a difference, honestly want to know if it makes a difference. You can test by: - creating a batch of cookies - splitting into two (one batch split into two portions removes some variables from the equation compared to 2 separate batches) - freeze one for 2 days, let the other sit in the fridge for 2 days (I typically age the cookie dough for 3 days so no worry of spoiling) - freeze the other one after 2 days so now you have 2 frozen cookie batches (both should be frozen to compare apples to apples, otherwise cooking time and spread would be affected) - bake them, ideally at the same time, on the same tray, but mixed up on the tray to allow for fair and even baking - eat - report findings Also, your brown butter looked more like burnt butter, how it tastes is the ultimate decider, but from here it looked a bit too dark. Maybe look into that.
I actually love hearing gluten free cookies recipes. I don't have celiacs but a lot of my family does and I'm looking for recipes that are actually good
I'm gluten intolerant. I just started making an effort to be gluten free, I am on the heavier side so making the switch is really helping. It is really challenging to cut it out since gluten filled things have been my life. ;-; I love sourdough. Oh well, change is for the better :) I will just watch the things that I wish I could eat and maybe make it someday for those I love who aren't gluten intolerant or have Celiac(is this how it's spelled?) disease, my brother is also a diabetic so sugar free would be nice but it's not the end of the world, plus the regular stuff doesn't make things go wrong in your system like some sugar free things

I did do Alvins cookies, I did use a tablespoon of cinnamon instead of the espresso powder due to my sencitivity to caffeine. But jees, so good! I also made the cookies half the size and they are still big in Swedish comparison. ❤️🍪🙌

It took me two attempts at the toffee. My first batch I was so scared of overcooking the toffee that I undercooked it and it was soft and chewy: Happy Accident, I added peanuts and got homemade paydays!

When making the toffee make sure the temperature of the sugar and butter is around 289 - 291 and that's the right temperature for toffee for you to take it off and it being cooked.

I did the 2 Hour cookie just before I watched your video. In the recipe, they wrote 12-15 min in the oven, but they got too dark so I changed it to 9 min and now they are perfect. In Germany, they are different settings in the oven like circulating air, Top and Bottom heat, etc.. I had it at circulating air first (like in the video), but they got dark really quick so I changed it to Top and Bottom heat.
I hope this helps a little bit even if the cookie isn´t mentioned here.

When you age cookie dough you do so in the refrigerator not the freezer.
From my research, the primary action of the aging process is to allow enzymatic reactions to take place that break down the large carbohydrates into smaller carbs with different flavor profiles much like the Maillard reaction. If you are freezing the cookies you are arresting those reactions.
There are other benefits to aging as well such as allowing the dry ingredients to become fully saturated as well as a bit of a drying to take place to concentrate the flavor.
Give it a shot and see if there is a difference, honestly want to know if it makes a difference.
You can test by:
- creating a batch of cookies
- splitting into two (one batch split into two portions removes some variables from the equation compared to 2 separate batches)
- freeze one for 2 days, let the other sit in the fridge for 2 days (I typically age the cookie dough for 3 days so no worry of spoiling)
- freeze the other one after 2 days so now you have 2 frozen cookie batches (both should be frozen to compare apples to apples, otherwise cooking time and spread would be affected)
- bake them, ideally at the same time, on the same tray, but mixed up on the tray to allow for fair and even baking
- eat
- report findings
Also, your brown butter looked more like burnt butter, how it tastes is the ultimate decider, but from here it looked a bit too dark. Maybe look into that.

I actually love hearing gluten free cookies recipes. I don't have celiacs but a lot of my family does and I'm looking for recipes that are actually good
I'm gluten intolerant. I just started making an effort to be gluten free, I am on the heavier side so making the switch is really helping. It is really challenging to cut it out since gluten filled things have been my life. ;-; I love sourdough. Oh well, change is for the better :) I will just watch the things that I wish I could eat and maybe make it someday for those I love who aren't gluten intolerant or have Celiac(is this how it's spelled?) disease, my brother is also a diabetic so sugar free would be nice but it's not the end of the world, plus the regular stuff doesn't make things go wrong in your system like some sugar free things
