I used a very different rub but the same technique (the parchment one) and the technique is AMAZING! The meat gets nice and tender and due to.the parchment all.the juices stay inside however the down side (the one touching the pan) gets way more tender and juicy. I'd probably try to flip it half way the next time. I made the lamb leg today.

Do you add water at the bottom before adding veggies?
It doesn’t look like it and I don’t think you need it. The juices from the lamb will coat it.

I cut the fat off...ALL of it. Every recipe says not to. You don't have to! Don't trim the fat!
