For the sack thing, we also call a mans testicles a ‘ball sack’ due too the two balls being incased in a bag(sack) of skin. So I think it was less to do with the actual definition of the word and more the slang meaning.

The version of this joke that I've heard is "Why is Santa's sack so full?" and "full" makes more sense than "big". His "sack" (ballsack) is "full" (of semen) because he only comes (has an orgasm) once a year.

Yea definitely. Also I was confused by them saying size equals performance. If you know how the genitals of a male works than you would know that size does not equal performance. A lot of guys that have a bigger than average penis have problem getting rock hard and erect. Especially compared to a guy with a more so average size. You see it in plenty of porn as well. Guys with bigger dicks have problems getting fully erect when they perform on videos. I feel sorry for guys with little below average peckers but the best and optimal size would be around 5-8 inches. You still have plenty to work with and you don't have a harder time with performance issues. Erectile dysfunction is a thing and having a bigger size makes it all the more worse.
