That looks delicious. Much better than the fish cakes my daughter had out yesterday. Just a little observation about spring onions. I have never, in 63 years, cut a spring onion down the green, as you would a leek, to wash it, but I do now. Twice recently I have found them full of grit. The first time I made a smoked salmon and spring onion quiche and couldn’t understand where all the crunch was from. When I looked at the rest of the spring onions they were full of grit. The quiche was inedible. The next time I bought some I had to sort through, in the shop, for the same reason. I don’t know if I was unlucky but worth knowing to keep an eye out. Looks good. Have you ever used tupperware boxes with lids to bread and flour? Out the crumb in one bow, flour in another then add the fish cakes, lid. and gently shake. You waste a lot less crumb and flour.
Love fish cakes, love tuna, a very versatile fish. They look lovely 😋 like the mushy pea idea! I remember at work one year, I went in at 11am and head chef had opened a big pack of smoked salmon next to the food prep sink, when I walked in the salmon was in the sink in boiling tap water 😆 Guess who had the job of making salmon and 30 chilli fishcakes lol
Add mayonnaise slowly so it isn't too wet just so it holds together nicely. Season well especially good grind of black pepper. Also I press them in to plain flour and then cook em beauty mate serve with a nice salad. Don't like mushy peas.

My personal preference is to grate a red onion into the mixture as I prefer a strong onion flavour.😊
