Excellent video. If you come to Serbia again, I advise you to visit the city of Nis again. Especially the tavern/kafana "Mrak". This kafana is said to have one of the best BBQ in the world and a very good steak, as I see you are a big fan of it. Of course, apart from the Mrak kafana, the city of Niš has many other kafanas with excellent food. As well as the cities of Pirot and Leskovac, also in the south of Serbia.

I loved this chef for many reasons. For one, he didn't waste the precious juice and reapplied it over and over. Two, he actually seasoned the steak.
He also seasoned it very liberally with alcohol with all that unnecessary flambeing.

what i wonder is why do they cook it to such a slow temperature, you usually want a hot surface to get a pronounced crust
I read somewhere that the wagyu fat melting point is actually lower than human hand temperature. So maybe to avoid burning the fat
