They are supposed to not draw attention and are supposed to be 'bland'. It's not about them. They are there to assist. Not stand out.
He wasn't supposed to be on theme, he was hired as a greeter, so a simple suit was his working uniform, similar to waiters or other staff at the Met Gala. I actually do remember seeing some videos of him last year, of people gushing over how hot he was, so it wouldn't surprise me if someone tried to put an end to it in order to not deflect from the people who are supposed to get the attention, namely the guests. As for him not being good-looking enough to cause a stir: The internet is weird. Remember the Target guy? He was also a guy who was good-looking to a perfectly normal degree, yet people went crazy. So this checks out.
