This is where simplifying your meals will really come in handy! Try making a protein (roasted chicken, steak, burger, pork chops, etc.), and a veggie (broccoli, zucchini, cauliflower, etc.) and then buy some ready-made side dishes to round out HIS meal - like Scalloped potatoes (Costco sells some that are awesome - and it could easily be 6 servings. I'd cut it in thirds or quarters, keep enough for 2 servings and freeze the rest.) Then, when you're serving dinner, just serve your husband the potatoes. You'll both be able to enjoy the protein and veggies, he won't feel deprived, and you won't feel like you're missing out because it's only one side dish. In fact, you could make cauliflower au gratin and serve that to BOTH of you and I doubt he'd even realize it's not potatoes! Make enough for both of you for two meals, then skip a day in between so you don't get tired of it. 🥰 As for not wanting to cook every day, that's where recipes like these soups come in so handy! Whenever I make a pot, I end up filling up at least 3 or 4 containers to put in the freezer. That's a DAY OFF from cooking down the road! Just defrost them and heat them up and VOILA! You have a wonderful, home-cooked meal that will make you happy. When you cook, make double recipes and freeze half. And when it comes to eating leftovers, rotate them - so you're not having meatloaf 3 days in a row. Have meatloaf, then the next day have leftover soup, and the next day, have another dish - like spaghetti squash, and by the time meatloaf is back in your rotation, you won't be tired of it. You should be able to cook just 2 or 3 days a week if you always make extra. 😄Good luck! And Kudos to you for sticking to it in spite of your husband not being on KETO. Keep up the great work!

Thank you RJ! This is perfect for Fall and winter-it's pure comfort in a bowl! 🍲 I have NEVER had a roasted root soup, but this looks like a perfect place to start. I love how you break it all down for us-by the way I never realized how much chicken stock could save on carbs until you pointed it out!I love your cream of mushroom soup it is still one of my all-time favorites. Just wondering if I can use that in my green bean casserole instead of the canned one I use every year. For that recipe I swapped in chicken stock instead of veggie stock, and it turned out so rich and flavorful. This roasted veggie soup seems like it would be perfect as a meal on its own but also a first course for Thanksgiving dinner-it’s cozy, hearty, and just feels like fall in a bowl. A little of this and a little of that is what I grew up doing as I cooked, so I love how this recipe gives the freedom to adjust and make it your own. And thank God head chefs approve of tasting as you go-I only know how to cook that way, sneaking spoonfuls to taste test the whole time! I also love how you ended your video with the mention of healthier foods, cleaner air, and a brighter future.-thank you!
I don't see why you couldn't use homemade cream of mushroom soup in your green bean casserole! You might even want to take out some of the mushrooms (a cup?) before you puree the soup. They would add a familiar texture to your green bean casserole. 🙂 Chicken Stock has 0 Carbs... Veggie stock has 2 Carbs per cup. So any time you can use Chicken or Beef stock instead, go for it! It sounds like you're as creative as you are healthy... Love it!
