    1 ½ cups all-purpose flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    ½ teaspoon salt
    3 large bananas, mashed
    ¾ cup white sugar
    1 egg
    ⅓ cup butter, melted
    Love the recipe. Made it many times. 🌹

    Thank you for your question. If your muffin pan is for regular size muffins, then yes, you can either bake the muffins twice, or cut the recipe in half. If you have a muffin pan for extra large/jumbo muffins, you can still use this recipe but would need to increase the baking time, so that the muffins bake all the way through.

    The recipe for theses muffins is 1 in a half cups of flour, one tea spoon of baking powder, one tea spoon of baking soda, and half a teaspoon of salt. Sit this bowl and set it aside, Get another bowl and mash three ripe bananas, after mashing add three quarters of a cup of sugar, and one egg. Mix this together and add a thord of cup of melted butter after mixing. After mixing the butter add all the dry ingredients you made before. I added cinnamon and vanilla extract to make it sweeter but this is optional. Scoop the batter into muffin pans and put into oven for 25-30 mins for regular muffins but for mini muffins 10- 15 minutes. If your not sure when you put it in just use a toothpick and if it comes out clean they are done. Or just tap it lightly and if they spring back they are done. Ps: These are amazing muffins i just made them and ate them and i added chocolate chips inside them too make them sweeter and it was honestly worth it. I also added walnuts too and they are amaazing

      Vashti Grace it’s baking powder not baking soda and if you do want to make it without baking powder it’s just gonna be pretty small because without baking powder it wont rise

      Vashti Grace The recipe calls for baking powder and baking soda. If you do have baking soda, use 3 teaspoons of baking powder to replace it. So in total for this recipe toy would have used 4 teaspoons of baking powder!

    Thank you for your question, Ritz. Yes, you may use brown sugar instead of white in this recipe. The muffins will have a slightly darker color and more molasses flavor (which comes from the brown sugar). Happy baking!

  • @allrecipes
    @allrecipes  11 років тому +3

    Hi Denise, thanks for your questions. This recipe will make somewhat dense muffins. If you do chose to add more baking powder, we only suggest about 1/4 teaspoon more. A better solution for larger, expanding muffins is to add a bit more batter to each cup, this way they will create that "muffin-top". Chocolate chips folded into the finished batter would make an excellent addition. Enjoy :)

    Thanks for your question. Yes, this recipe calls for 1/3 cup of melted butter. We've provided a link to the recipe in the video description box if that helps. Enjoy :)

    That's a great idea. You can add up to a cup of raisins and nuts (together) without really having to change other ingredients or baking time. Happy baking!

    Thank you for your question, Sherlyn. Without the baking powder, the muffins won't rise as much and are likely to be more dense.

    Thanks for your question. You can certainly bake this into a cake. Be sure to test the center with a cake tester or toothpick to check that it's baked through, as it might need a little longer. Enjoy:)

    I couldn't ask for an easier recipe!!! I'm only 14 and I have problems with eating breakfast every morning and now I can make these tonight and hopefully they'll last for the rest of the week for breakfast! Thank you so much!!! :D

  • @allrecipes
    @allrecipes  10 років тому +5

    Thank you for your question, Michancita! The salt acts to highlight the flavor in baked goods and also improves the texture. The amount of salt you are adding is very small, so the muffins actually won't taste salty at all. Hope you give these a try!

  • @allrecipes
    @allrecipes  11 років тому +4

    Hi thanks for your question! The egg mostly acts as a binding agent and adds moisture. So, some great substitutions would be extra banana! About a 1/4 cup of mashed banana will equal 1 egg. Or you can substitute a 1/4 cup of vegetable oil. Let us know how it works for you :)

  • @allrecipes
    @allrecipes  10 років тому +2

    Hi yokai sama. If you don't have double-acting baking powder to replace the baking soda, we wouldn't recommend using just baking powder. Baking soda is about four times as strong as baking powder, and therefore is needed in this recipe to create texture and rise.

    So I tried out this recipe ... made a few tweeks but it's a hit. I had 4 small bananas at hand so used that, I added 1 cup of whole milk to the banana mixture along with 1 tsp vanilla essence. To the flour mixture I added 1 tsp grated nutmeg and 1 tsp ground cinnamon. 1st trial and a success in my books!

    Thank you for your question. We would not recommend using bread flour. Bread flour has a higher content of both protein and gluten, so the muffins would turn out tough. Happy baking!

    i wasn't planning on commenting but i just wanted to say that this recipe is literally THE best!! i just made a few changes tho... instead of white sugar i used brown sugar, instead of 1/3 cup of butter i used 1/4 cup of oil bc i was too lazy to melt the butter 😭 (i saw a comment saying u can use it to substitute) and i also added vanilla essence and cinnamon powder (like most of the other comments). it wasn't bitter AT ALL and it came out perfect for me so i do recommend :)

    This recipe uses both baking soda and baking powder, Shayla Kelly. Do you mean to use only baking soda? If you replace the baking powder with baking soda, you can make your own substitute for baking powder. Do this by combining 2 parts cream of tartar with 1 part baking soda. Example: Mix 2 teaspoons cream of tartar with 1 teaspoon baking soda. Use the same amount as the amount of baking powder stated in the recipe (1 teaspoon). That’s no matter how much homemade baking powder you make.

    Hi Melanie, thanks for your question! Baking soda is used with the baking powder as a leavening agent to help the muffins rise. The baking soda particularly helps with neutralizing acids and adds tenderness. If you don't use it, you can try substituting with 2 teaspoons of double-acting baking powder for every 1/2 teaspoon of baking soda. Happy baking :)
