I made this about an hour ago, I was sure I had done something wrong when I was making the toffee. The temperature just hung around 240 degree F and would not move. I resisted turning the heat up or just giving up, your instructions covered all this so I continued to stir. When the temp change happened, it happened quickly. This is so delicious, I couldn't believe the rich toffee taste. Thank you so much for the wonderful, detailed instructions you give. I will be making this again, the next batch will be for gifts.

My mom always made toffee. She would break it in small pieces and dip each piece in chocolate (your way is way less time consuming!).anyway, years ago I asked for the recipe and failed my first couple of batches. In my directions, it says, “If it starts to separate, don’t panic, just keep stirring and it will come back together” and it does. But if adding corn syrup helps, that’s what I’m doing next. I haven’t made it in awhile, but it’s definitely a favorite!! BTW, I made my third batch of Butterhorns since thanksgiving, took them to work, and the staff RAVED about them. I’m a nurse and it’s nice to have special treats during this crazy time. I’ll have to try the toffee for them next. Thanks for all you do!!

Great video! I was obsessed with candy-making as a kid. I discovered how to make toffee “accidentally” when trying to make taffy. I didn’t have all of the ingredients required for taffy so I improvised the ingredients and I also ended up overcooking the batch. I was amazed that it turned out tasting like a Heath bar. Haha. Great presentation, sir, and very easy to follow!

I love English Toffee too.. my mom and i would make it for Halloween and Christmas.. we'd use bittersweet chocolate - well they didn't really have a lot of dark chocolate chips back in the 70s (yep kid of the 70s and early 80s here) and for Halloween we'd add orange flavour to the choclate and crushed candy canes to the Christmas ones...

I've made this toffee over n over again. It's the best recipe for toffee out there. Soo easy, n boy is it expensive 2 buy at a store. Never realized how easy n cheap it was 2 make. The store's r robbing people that buy it. Truly.
My children are allergic to nuts. I am wondering if I can substitute pretzels for the nuts? Maybe use unsalted butter to counteract the extra salt of the pretzels?

I have a couple of questions: I have tried a few different candy thermometers that did not give me the correct temperature , so most of my attempts to make almond Rocha have failed. Would you suggest a candy thermometer that works? Also, I live at 4,000 feet above sea level. Will the temperature be higher or lower when the toffee sets? Or is it the same temperature anywhere?

Try this with white chocolate and top with slivered almonds. It's a blonde version of this and it's delicious!
