This is the exact recipe how my 96 year old Aunt ( R.I.P.) used to to make. The only difference was she put nuts on the top. I have to tell you, she never timed her cooking process. I asked her how long do you cook it. She said it was done when you see the first puff of smoke, then immediately take it off the burner. This never fails. Every time I make it I think of her and miss her.❤

Another surefire gauge for toffee doneness is an ordinary brown paper grocery bag. Keep it nearby - but not too near the heat - and when the candy has cooked to the point that it’s the same color as the bag, it’s done and ready to pour out. Works every time!

@tracyosborne6963: Brown sugar tends to have MORE moisture in it due to the molasses! Perhaps, that may be one of the reasons why the TOFFEE never becomes CRUNCHY; however, when baking cookies and you DESIRE moisture, i.e. chewiness...BROWN SUGAR or a combination of granulated (white sugar) and Brown Sugar (molasses) is IDEAL! ;-D Go with this all WHITE SUGAR recipe it is wonderful! 😀 *P.S. Sometimes, I use "infused" vanilla white (granulated) sugar...the vanilla beans in the sugar brings an even greater FLAVOR profile! ;-D Blessings to you & yours!

This is the 1st time I've come across your videos & I love it! I've made my own toffee before, (using my own recipe), and I have a suggestion for you - just before you pour the toffee on the cookie sheet, turn the fire off & quickly stir in 1 cup of chopped pecans. Then proceed as usual. It'll make a huge, and delicious, difference!

Or, you could sprinkle the pecans (or anything else: pretzels, crackers, nuts, etc,) evenly on the baking sheet and pour the toffee over it!

That is the way I make my toffee. One batch I make with chopped pecans and one with almonds. Our family loves chopped nuts and I use dark chocolate. This is a very versatile

My mother always used an iron skillet because it distributes and holds the heat. The trickiest thing about this candy is knowing when it is browned enough, not too much and not enough. But with practice, I found I could get it just right. My mother always used chocolate chips and sprinkled crushed almonds over the chocolate. My FAVORITE candy!! Yum!! We only make this for Christmas. It’s such a treat. Thanks for sharing this video. It brings back childhood memories.

I remember making this as a freshman in high school in Home Ec class in 1966. I think our recipe came from either Better Homes and Gardens or Betty Crocker cookbooks. We used a candy thermometer to bring it to desired temperature (didn't go by color). My family loved it. I made it for several years until my sister and I joined Weight Watchers and convinced our parents to follow the program, too. The was the end of my candy making. Now that I'm diabetic, I doubt I'll be making this but may enjoy a SMALL piece if it happens to be at the family Christmas do. :)

T & M, I've gotta do this toffee candy recipe! Melissa, PLEASE share the "Ritz, peanut butter dunked in chocolate" cookie recipe that your grama stashed away all the time! I have an idea how it's done, BUT, I want the actual recipe from you. Do it in video form for all us viewers to enjoy!😁👍🤭😇 Doug

Back when the kids were young I used the toffee portion to make peanut brittle. Everyone loved it too! This recipe brought back some fond memories. Thank you for sharing it.

I've always been a bit scared of this recipe (more traditional versions, with the dreaded candy thermometer!) but you made this seem achievable. And it looks wonderful. I copied the recipe as you talked and will be trying it soon. You and Melissa make a great team. I've just subscribed, Oh, your story of getting this recipe from a co-working in the 1980s (though you look too young to have been working then) made me think of a dear womam who I worked with who was a great cook. For my birthday one year she made a carrot cake - which Id never had before (shame on you, Mama) - and I'm sure my face fell when she said 'carrot cake'. But I thought I'm a grown up, I can take a bite and say it;s great, and thank you, and then just discard the rest when no one was looking. Much to my delight and surprise, it was, of course, amazingly good. I'm sure I ate more than my share that day. She gave me the recipe and I've been making it ever since. No way I was going to deprive MY children of that glorious dessert.

We never have but I don’t see why you couldn’t. We’d recommend chopping the nuts a lot since the toffee itself isn’t really thick. Enjoy your candy and Merry Christmas! Thanks for watching our videos!

@shannon, did you try it? I'm curious if you could sprinkle some sliced almonds around in the parchment-lined pan and carefully pour the toffee over. If anyone has tried that, could you comment, please, on how it went? Thanks. Happy munching!😂

My most requested candy to make for family and friend gatherings is the toffee candy. I was a wee bit disappointed that this particular recipe was not included in your new cook book which I do love. Looking forward to a possible sequel. 😉 Thanks for all that you and Melissa do. God bless.

I've been making a nearly identical version for 20 years. The one thing I would suggest as a change, is don't put the chocolate on the hot toffee and then stick it in the fridge. Refrigerate the toffee to get it cooled off, then melt your chocolate in a double boiler and spread it over the set toffee. The main reason is presentation. Cold does weird things to milk chocolate, which isn't surprising considering it's basically all fat. It gets hazy and the texture is a little weird because the milk solids try to separate. Also, fridges smell funny and placing melted chocolate in there will make it absorb smells. Probably don't want to leave last nights fish fry in the fridge if you're gonna put candy in there! Definitely chill the toffee and if you want, stick a bowl of water in the fridge with it. The added moisture will help keep the sugars emulsified and your toffee will set a little softer and break apart easier.
Once the toffee has set and chilled completely, pull it back out, drizzle/spread your chocolate on top. Add a little decoration if you like; I'll drop white chocolate chips on for some visual contrast. Let the chocolate cool a little bit before dropping the white chocolate chips on though, otherwise they'll melt.
After everything has cooled to room temp, break it apart and store it in an airtight container on some paper towels.

I have made this for Christmas every year. Small paper plates with wrap around for all members of the family. I also put almonds on top when chocolate is soft, which is very good. That was my gift to all my family. Thanks for sharing your time, talent, and love with us all. Merry Christmas.

Oh my gosh.. I didn't realize one of my favorite holiday treats is so easy!! I just made this and even added toasted slivered almonds on top before the chocolate cooled! I didn't have Hershey bars so I used 1/2 cup of dark chocolate chips. Did you know a Hershey bar is only 1.55oz of chocolate?? And we pay how much for one bar?? Robbery I tell ya 😂😂😂! Anyway...awesome recipe, instructions and very enjoyable video. Thank you!
