It has been a joy to watch Hercules Candy grow from tiny batches of candy in the basement, to moving to your new store, learning and developing new techniques, bringing on employees to help with making, packaging and selling candy. I remember Steve dropping caramel with a spoon. It was a joy watching you thrive and survive through the pandemic. I’ve been watching since No Egg Craig days. I’m so happy for your success!
I laughed out loud at that. That scream is called a 'Wilhelm Scream' and can be heard in lots and lots of TV shows and movies for the last 70 years now.
Yum! I make these too but I use butter to thin out my caramel and then sprinkle, very little, the tops with sea salt after they’re covered in chocolate. Also for do-it-yourselfers, place a thin layer of chocolate in a parchment paper lined rectangular cake pan. Then place a layer of pecans or whatever nuts you want. Then cover these layers with caramel. Put in refrigerator. In ten minutes take it out and place the top layer of chocolate and sprinkle with sea salt if you want. Put back in fridge for ten minutes and then cut into small squares. Less time consuming for those of us that don’t have a chocolate enrober! Lol
I just laid a tray of pecans did blobs of caramel and then when they set I just put a few into a bowl of melted chocolate and used a fork to get rid of the excess.
@@xolio1993 first time I did it by dipping in chocolate too….but we have a very large family and get togethers are huge. If I dipped, I’d be dipping for at least 2-3 days. Dipping does make them look prettier!

I remember Steve back in the day when it was it was done practically in slow motion compared to now. Also Steve and Max always had to check the bottoms of each turtle if it was fully covered. This is so much better. #iykyk 😉❤❤
They could almost make small guest packs named after family/employees like Trotting Terry Creams, Super Steve Sampler, and the Share'n Karen Assortment comes to mind. Though the Joe might be Wood is Splinters Turtles/Bark rings a bell as well and kudos on being open once more trust come the holidays there will be a line of customers out the door...🍭🍭

I have to go back to the old videos to watch some of the lusciousness from years past- Steve made chocolate covered cherries the way my Dad taught me-... so those are extra special. I cannot purchase candies but I can support my favorite candy company by watching videos and using the lovely calendar. Just wanted you to know unless the videos are complicating your issues- you can continue watching. If you need to leave- it is fully understood. I wish you well on your journey to better health and less pain. ... love from another subscriber.

Are the pecans toasted before covering in caramel? I know when I use walnuts and pecans in baking I toast them in an oven and it brings out their flavor more.
The medieval times (or the middle ages) ended around 1440-1450. Sugar was around but really expensive, more expensive than gold so I doubt it was tossed over the walls of castles. It wasn't until 1800 that sugar was a common staple.
Imma be honest, I’ve always made them as “turtle bars” at home hahahah it’s wildly quicker (but way less satisfying than a million tiny bloops of caramel) to just spread the caramel across the nuts, then do a layer of chocolate on the top and bottom hahaha
Hi! When I make them at home to give to friends and such I melt my caramel and add my nuts and then roll it into a ball sort of. Once the ball has set up a bit I dip it in chocolate. and make it more like a ball patty I hope you know what I'm trying to convey here! :-)
2 problems are avoided- 1. the unevenness of the nut layer can get caught and cause a major traffic jam or a candy version of a major traffic accident. and 2. when the nut layer is facing down, not all the crevices underneath get fully covered in chocolate which in turn reduces the shelf live because the nuts goo stale too quick.

@@jackandjill9065 I used the Brach’s caramels that come in little squares…individually wrapped. I put a little butter in the pan when melting them.
