I always cook my lamb shanks in cast iron pot, lid on, in oven. 2 to 3 hours. Super tender, delicious! 😋

I tried making it and this was so good omg!! it is was juicy and I slipped right out of the bone when y'all pull it and it was the first time I cooked lamb, it was an easy recipe anyone can grasp!! Mom was utterly impressed

I have made this a few times. Delicious every time and served over creamy polenta. YUM! The shredded lamb freezes well. If the stovetop method does not work for you I have placed in the oven on 325 for 2-3 hours in a covered dutch or until tender. Still amazing. Make sure your butcher saws off the long bone of the shank (but keep it for added braising flavor). The first time I forgot and the long bone was without meat and caused a crowding issue in my dutch oven. The third time I made this, last week, I add one lemon, juiced, the last 30 minutes. I think it brightened it up. My opinion. He is the master!
Also, I found there is always so much liquid left over so don't throw it away! I actually warm the leftover braising sauce for breakfast in a fry pan and added eggs nested in the liquid and cooked until the eggs are poached well in the sauce. Served over the leftover polenta that is sliced and pan fried to brown. Side of fruit and Viola!!! So good. Love this guy. My Italian immigrant parents did not cook lamb a lot since they were into so much 'depression food'. Cheap, easy. 😂

My favourite ways to have lamb are either in a stew or roasted with garlic and rosemary.

Chef Pasquale, I love all of your videos and recipes. Best on the block! But somebody PLEASE give the man a Turkish coffee mill for Christmas! I'd lose my mind cranking that little coffee grinder. I've used a Turkish coffee mill for 30 years and love it. Works so much better than the run of the mill pepper grinders. Saves a lot of wear and tear on the wrists!

That's almost exactly how I make it too. But with a very slight difference: I use a tablespoon of Moroccan spices when I marinade it. It gives that little "je ne sais pas qu'à" earthy flavor to the sauce and makes your kitchen smell even better when preparing this dish, that typical Mediterranean smell. ;)
