The Cento clams in the can are already cooked. The clams should have been added after the clam juice had simmered with the white wine and then heated through. Lastly, add the parsley. I prefer crushed red peppers versus the black pepper.
Add clams last - check! With the parsley - check! Red pepper flakes over black pepper - check! You hit them all… EXCEPT - a splash of dry vermouth just before adding the clam broth
I rinse the clams to remove any potential pieces of shell that may have got in there and sand. I strain the clam water in a fine mesh strainer to remove any shells and sand also.
