Forest Berry Cheesecake (VEGAN)

- Fresh, fruity, rich, and nutty. If you are a berry lover then you will fully enjoy the creamy berry layers of this cheesecake. The rich brazil nut crust adds a delicious depth of flavor and the sweetness of the mulberries gives a candied taste.
Ingredients:
For the Crust:
1 ½ cup mulberries
¼ cup coconut oil
1 ¼ cup flax meal
½ cup brazil nuts
Pinch salt
½ tsp Vanilla extract
Filling:
¾ cup blueberries
¾ cup raspberries
¾ cup blackberries
2 cups cashews
1 tbsp lemon zest (~2 lemons)
4 tbsp lemon juice (~2 lemons)
½ cup coconut oil
4 tbsp water
1 tbsp nutritional yeast
2 tbsp vanilla extract
Garnish with Mint leaves, berries and coconut flakes
