Those rear carrier bolts are often rusted so badly you can't get them off without a lift and breaker bar. Hitting them with a hammer will damage bearings (ask me how I know). If you want true frustration try getting those bolts off without a lift and leverage!
I don't like to lubricate the pad ears because where I live it is dry and dusty and it gums everything up. Near the ocean where you are it can help but for me I only put the grease under the clip in hardware on the caliper bracket to prevent noise. Don't forget to put grease on the piston face that touches the pad and the ears on the other side of the caliper too for noise absorption. Do not smear it all over the pad because again, attracts dust. Only the part the metal covers the pad.
My friend gave me a set of those triple square sockets, but ive never needed used them, likewise i have the piston return set like you, but again have never needed to worry about the rotation aspect ! But now i realise i have not owned or worked on any VWs ????

I always give those caliper holder studs a few good hits with a heavy hammer before trying to turn them it makes a world of difference to loosen them.
I think in this model rotors are supposed to slide out with out removing the caliper bracket.
