Cooking with Momma T: How to Bake Macaroni and Cheese

- Baked Macaroni and Cheese
Ingredients:
1 lb
Elbow Macaroni
24 oz
Sharp Cheddar Cheese (Shredded)
1 stick
Butter
2 tbsp
All-Purpose Seasoning
1 tsp
Pepper (Black or white)
2 cans
Evaporated Milk
Directions:
Preheat oven to 400 degrees F. In a large pot of boiling, salted water cook the macaroni for 15 minutes or until tender. Drain and pour noodles in a deep 13 x 9 baking dish. Add butter, half the cheese, all-purpose seasoning, pepper, and stir until cheese is well combined. Add 1/2 cup of cheese and continue to stir. Cover the top of your dish with the remaining cheese, pour in 2 cups of can evaporated milk, cover with aluminum foil and back for 20 minutes. Remove foil and bake an additional 10 minutes. Remove from oven and let rest before serving. *NOTE: This recipe works well with a variety of different cheese, such as Colby Jack, Cheddar and you can add Velveeta or Cheez Whiz.

This recipe! Ive been making a smooth cheese sauce and pouring it over the noodles for many years, lots of recipes and Im still searching for the one! Ive got to try this and maybe not get disappointed once again with the leftovers being one big clump!
Would love to hear your ideas on why this works better than a cheese sauce with flour... I don’t t do the egg version with corn starch.

Hi There Maggie and thank you for your kind words. I am not sure if I would say better rather than different. I personally have never been a fan of the saucy Mac and Cheese, but I don't like it thick and chunky either. When you make it, think of another way instead of better way. LOL! I make 4 different versions and like them all. Hope that helps

Hey Mama T, local here. Have to ask if you find it better to cook the noodles in stock and salty as the sea since it's getting rinsed to stop it from cooking or to just use water with a little salt? Butter is the only way to cook, if anyone is using margarine, they won't live to be your age. Hehehe. I always use an assortment of cheeses that I grate myself, always. This weekend is vermont sharp white, 8oz, Monterey Jack Colby, 8oz, & 1 lb medium cheddar, and top it with 8oz parmesan & 8oz vermont sharp to 2 lbs of macaroni noodles. I also use evaporated milk to eliminate the eggs and corn starch.

I used a 16oz box of noodles and this recipe can feed approx 10 people. I generally double the recipe for Thanksgiving to feed 15 people with plenty of leftovers for family to take home. Thank you very much for your support to my channel.
Hi. When you’re not cooking it fast, when you’re cooking the same day to be eaten, what temperature and time do you suggest? TIA
I bake my Mac and Cheese on 400 degrees and depending on the quantity, it would bake for 20 minutes covered and 10 minutes uncover. When you remove it from the oven as long as there is not an excess of milk when you tilt the pan, it is good to go. You can also cover it again once it comes out of the oven, it you want to cook a few additional minutes. Remember that while it is resting, the ingredients are also coming together without drying out. That is why I use evaporated milk vs whole milk. I hope that helps

No egg ? I don't like this version I like to stor in my milk , egg and cheese so the milk just don't sit at the bottom. And if you had olive oil the noodles won't stick.

Yeah I like to mix the milk and eggs together then add to the Mac and cheese and mix it all together then put in the pan and coat with more cheese. Hers is still better then when I first tried, they told me to mix in in a pan and bring it to a paste like gook, I was like wth.
