I think anyone who know how to cook rarely writes anything down or follows a recipe 😂. In my case I get a lot of people asking how she does things and that’s where it gets difficult haha!
That looks so amazing. I'm sad we dont have anymore pattypan squash this season. I found out recently the yellow pattypan store SO much better than the green tint variety. Also, I had a yellow pattypan that was drying out on the table and decided to cube and sauté it with diced onions in ghee. It turned out to be just like fried potatoes. Since I try to stay low carb, this was a happy accident. I'll need to grow more of these next year just for the faux potato potential. Thanks so much for sharing! I will absolutely make your wife's recipe next season. 🤤 (ps: I dont measure stuff either, just eyeball it. Its all good) Peace and blessings ✌
We LOVE the yellow ones, but squash bugs got to most of ours this season. We have 6 plants growing now that are in a race with the frost so fingers crossed 😂. Happy accidents are great! We grew a baked (or mashed) potatoes hybrid squash this year that really did taste pretty similar to mashed potatoes. We cooked it with a roast and some other veggies and used it just like we would normal mashed potatoes, it was great!

@babyroot3479 so there’s two kinds and I can’t remember exactly which one we had. One is called a baked potatoes hybrid squash (I think this is the one we had) and the other is called a mashed potatoes hybrid. They are both extremely similar, both little acorn winter squashes!
