I made this yesterday and I followed the recipe to the letter ... it was ABSOLUTELY AMAZINGLY DELICIOUS!!! I ate two huge bowls full yesterday's and I can't wait to have some more today!! I will be using this as a staple recipe to enjoy atleast once a week!!! Thank you so much for sharing - I love it!!!

that's not true. Vietnamese cuisine has a huge selection of vegan dishes. Traditionally, Vietnamese people eat vegan twice a month, depending on the lunar cycle. A large portion of Vietnamese people (mainly Buddhists) always eat vegan as part of their religion.
I've been living in HCMC for 10 months, and this morning was the first time I tried this dish (at my favourite vegan restaurant)...it was delicious.

Hi Helen! I love your recipes, especially the chay ones! My family eats buddhist vegetarian every first and 15th of the lunar calendar, plus a slew of other days inbetween. I was just looking through your recipes for inspiration on Chinese New Years, since unfortunately for me, that does land on the first of the month. But your recipes look great and could make vegetarian day bearable! I was hoping you could upload a video for Bun Rieu chay. Thanks!

Great recipe! I am not vegan but my boyfriend is. I would love to introduce him more to the vietnamese cuisine, which I grew up with, especially to the specialities like Pho, Bun Bo Hue, Cha gio, Banh Mi etc. Thank you very much for your vegan recipes lately, I really appreciate it! :) Do you know where to buy vegan "fishsauce" or how to make it? I can't find it anywhere, not even in the vn-shopping-paradise Dong Xuan in Berlin or SAPA in Prague. I've also seen videos around but somehow I trust you the most lol

Love all your VEGAN recipes!! how about the famous tomato-based soup? Some of vegan restaurant will have a tomato based soup with crumbled tofu etc... I think it is the vegan version of the tomato crab soup... would love to see a vegan version too!! THANK YOU for Sharing! :D

Can you make the mushroom/leek sautee ahead of time? I'd love to be able to do a few of these steps ahead of time to make dinner time very quick. Thank you again! Love your channel.
+A. Payne the leek sautee can be made ahead of time and stored for a week in the fridge, but the mushrooms should be freshly cooked.

You can also juice the fruits and veggies and you won't have to boil for a long time.
