I've just recently moved from flat to MTB clipless pedal in my roadbike. But if I will have a touring bike or gravel bike in the future I'll still use the flat pedal so that I can still use my sandals. 😅 That Scott S30 is ❤. Proud scott S40 user here. 🙂

Super cool space and looks like a great shop all around. Fitting rooms, bikefit studio, and every brand you can think of. I really prefer this kind of model to the franchised system in the US, where you'd have to go to four different shops to compare four frames or four helmets.
I've been using Met helmets for a few years now. They have nice aero and non aero options with different colour options too. I personally use a Met Rivale at the moment
I've never even thought about your camera and I don't usually like chest-mount view. The positioning is good, your arms don't take up half the screen, and there's no extraneous movement. Good job!

‘Oi!’ is a pretty Aussie greeting (yelling) expression - that bell is from this town, Melbourne-based company Knog (silent k). I use one as well. Now they also make classic bells, and some unique lights with power bank built in, etc)
Good idea on channel. Honestly the Brompton pays for itself with what I save on public transit and if I want to I can take it on public transit. As someone who works remote, I take it with me inside to cafes to do work or occasionally to the office and never worry about it getting stolen. The birdy is a good option as well. Doesn’t fold as compactly but rides with better suspension and feel, but honestly if you are getting a “folding” bike get a bike with a good fold. The ability to take it with you into stores such as the supermarket easily just makes life easier.
I purchased a Bontrager Starvos Wavecel helmet back in September, and have since worn it for several 50 K + road rides. It's really comfortable and I also like the look of it (I know this is more of a subjective thing). It retails for about $134 CND + TX (I'm not sure of the exchange in Yen).
In the U.S. it is getting hard to buy replacement parts for bicycles. I was informed by a bicycle mechanic Shimano is limited at this time. They are focusing on making drivetrain parts in their factories just to help keep the bike shops supplied for repairs. Non essential product like peddle clip covers are not being made at this time. I just wanted to make a suggestion about the camera mount. You might consider getting GoPro style extension for your chest mount that would raise the GoPro and put it slightly more out in front so that your arms don’t block the view. Extending it out and up just 5 or 10 cm might really improve the viewpoint and perspective. If you are not quite sure of what I am suggesting, I can send you a few photos. Another possibility is to mount your GoPro on the top front of your helmet just above your eyes/slight line. Luv your channel. Keep up the great work!
27,5 is not really out of fashion, it’s just been adopted by different types of riders the last few years, as it was originally the choice of French rando bikes, you see some types of bike going away from it allready, but i think it has a place in allroad touring 👍
I enjoy these bike shop tours in 🇯🇵 Mainly because they still have many bikes on stock you can view. My country’s bike shops are so 😞 and empty without much bikes or parts available in stock. Talking about folding bikes “Downtube” (who sells bikes direct online) have Shimano Alfine 8 or 11 speed internal gear hubs with Gates Carbon Belt Drive. Go check them out. You did say you want internal gears and belt drive bike as your next bike. Now you can have both folding bike, internal gears and belt drive.

I have a Knog Oi Luxe bell on both of my bikes. It's not quite as loud as the Spurcycle bell a lot of people here seem to like, but it has a way more pleasant tone (none of the dissonance that comes with the Spurcycle) while still being plenty loud enough and has a more sleek appearance.
I didn't see any Pearl Izumi clothing which is interesting being that it's a Japanese company (owned by Shimano). Anyway you asked what kind of shoes we wear. I have Pearl Izumi road and MTB shoes and they work awesome for me. Thanks for the tour!
I really wish you guys get a brompton. I waited for a month to get my appointment here in NYC bromptonjunction to get my brompton. I use my brompton for commute and I use my road bike for fast rides.

Have a look at the K-Edge stem mount for the Gopro. You can find some footage on YT. It's nice because you can have some parts of the handlebars in the frame, so it doesn't feel like you're just floating through space.

So just go for it😁. But do priorities safety and comfort. You shouldn't get uncomfortable on long rides. Chest or chin mount, will still watch your videos. Specially love the talking rides.

To be honest about the "bicycle riding position", I think you should ride comfortably in the position where your joints are relaxed and not tense. (Such as a pole up the arse.) I had many people COMPLAINING about the position I was in. But is it YOUR style of riding or is it mine? I tried their suggestion and my lower back is still in pain today. If you can't touch your foot to the ground in case of an emergency, your seat is very high. I learned this from a guy who has chronic back problems from a bicycle accident. So chose your pick, be safe or live in pain.

Bridgestone used to make beautifull motorcycles too, but they got out of that bizz after competitors threatened to stop buying their tyres.
