- Sushi is one of the most popular Japanese foods, but we rarely see how sushi is actually made into that shape. This time, we found a restaurant where a sushi chef trained in Kyoto for decades can make sushi in front of you in a private space. Not only does it taste delicious, but seeing the actual process of making sushi is an experience you will never forget.

After 9 trips to Japan, the thing I love about Japanese culture is the care, attention to detail, and the ability to raise any activity to an art form, from taking a bath to dining on sushi. I miss the people from the land of the rising sun. I hope to some day visit again.
yea, the destroyed eco systems, pollution, and endangered species left in the wake of this exquisite food tradition. the care and attention to detail in butchering whales, sharks, and dolphins to extinction.
The sushi was so beautifully prepared I shed some tears looking at it and if I had the opportunity I would love to try this place one day as something to scratch off my bucket list

The hands of the Master Sushi Chef while making the nigiri had a rhythm and the technique. Everything has a purpose.
16:15 Maidenhair tree...also a gingko tree, is certainly a softer wood...similar to some harder pine species (for those of you here in the U.S.)...with a hardness of about 3300N. Here in the U.S. people all want hardwood cutting boards that are twice as hard as that because they don't realize how bad it is for their knives. They just want what LOOKS good and don't really care too much about what actually WORKS well.

It really is like the Eastern Hemisphere’s version of haute cuisine.

This was such a wonderful video. I love sushi but I usually wind up dining alone because no one else around me is interested. Also, this chef really elevated his sushi to the highest level and watching Japanese people experience his creations together made me feel like I was back in Japan. Uni is one of my favorites and I will dream of having uni sushi like the one you had.

Sushi is really delicious and I love sushi and onigiri rice balls so much! I always make some at home and seeing how professionals make sushi is really amazing and so tasty!

I love this. I just love the Japanese culture, so much thought and attention to detail go into things...the eating experience...everything is done perfectly with such care and effort. The surroundings are comfortable, immaculately clean, relaxing. The food is made and presented like fine art, portion sizes are perfect, everything is presented and timed just right. Truly a feast for the senses.

Yeah cost definitely is a factor for ne too! In the US I ate sushi a lot growing up... but later, with an adult appetite (and budget), it just was too expensive, $100 (10,000 ¥)... and that was of mediocre quality

Hey, it's a thing with this video, this seems like the type of place, but you make reservations, within a month or a week in advance, but most likely, a month in advance and it's very expensive.

A question: In omakasé restaurants can I ask that some type of food NOT to be among the choices the chef makes?
I'm extremely allergic to shellfish (shrimp, lobster, crab, prawns, etc.), so even though I'd love to visit a restaurant like the one shown in the video, I'd have to avoid it if I can't make sure I won't be offered things I can't and won't eat.
You'd also want to ask them what precautions they take to prevent cross contamination in the kitchen with storage and prep work.
Yeah wow you are allergic to all seafood? (to my understanding shrimps, prawns, lobsters, are not "shellfish"). Also, I guess that not all people in the world are use to eat sea uchin, congel eel, yellowtail simmered fish... maybe there is a touristic version?
@@empress2529 Isn't "all seafood" fish + shellfish? I can eat fish. Shellfish (arthropods + mollusks) are bad for me, however.

See how the Chefs kimono is tied up? This is what I was taught my sageo was for when not securing the blade. To keep your sleeves from interfering with movements.

I've eaten sushi in America so I'm not sure if Japanese sushi is different. Many foods are Americanized and differ from their original culture taste and prep.
Maybe it is different!! But this also brings alot of questions like if in America changes the way its prep?
It all comes down to quality of ingredients (protein, greens, rice) and how the sushi is made.
I'm sure it's a combination of both the ingredients and the way it is prepared in America they don't spend a lot of time to an individual person we tend to mass produce for more people to earn higher profits. Unfortunately but if they catered to a few the cost would go up per customer, so give and take.
@@theperceptor9287 is a combination of quality, how is prepared and served, and how is eaten: In Israel we dip the sushi as the sashimi, into soya or Teriyaki sauce, into Japanese spicy mayo, they ate the sushi with the brushed sauce only
@@empress2529 Hello and thank you for sharing how you eat sushi in Israel. In America we usually have ours with soy sauce, ginger, and wassabi. I've never been offered the mayo and also rice is served but not as a rice ball. Some sushi is wrapped in seaweed but never the rice. And if I remember correctly in the video he mentioned that rice was kept in vinegar to keep it fresh. Most Americans don't like vinegar so our rice is manufactured and stored differently. I would love to taste a true Japanese rice ball some day. Thanks again for telling me about sushi in your country I appreciate it. Take care
