I love the fact that having soup is like a silent signal for you to go. It's amazingly interesting to me that Japan has these quiet, respectful codes for people to follow so that noone gets embarrassed or held up when they don't want to be.
This or the famous song restaurants play when closing... Can't recall it's name though...

I think that what you're referring to as refreshments might more properly be described as "palate cleansers": foods that help clear the tongue so that one may better assess the flavor of the next item or dish. Refreshments is used to refer to light meals, snacks, or drinks; a small serving of sushi itself could be considered refreshments.
Now if someone could help me figure out what was going on with the sushi I had delivered last month. It wasn't bad, just looking like a modern art piece.

I have been to Japan 9 times and LOVE the people the culture and the natural beauty of the country. I've always maintained if you want to begin to understand a culture, eat their food and drink their beer. Awesome that Shogo is taking the time to help people understand Japan.
Shogo is such a wonderful cultural ambassador for Japan.
I like how thoughtful Japanese people are and how it shows in almost every aspect of Japanese life. I never knew about the soup being a cue to be done with the meal. It's a smart idea and I think we should adopt similar customs in America. This is why your videos are important. You actually teach us useful tips and the ideas behind the logic of Japanese thinking. I appreciate all that you and the team are doing, it's a lot of hard work. Much love and respect!
Traditions like this are a double-edged sword. The intention is beautiful, but not all people enjoy having so many expectations attached to basic daily activities.
America does have a similar, though less widespread tradition: when your host serves coffee at the end of a party, the party is over and they're politely letting you know it's time go. I do wish there was such a signal as universal and widely known as the soup one, though!

I'm visiting Japan in January and I can't wait to eat some sushi out there. Getting a sushi set would be the best bet for me. I would totally forget which sushi to eat first I think. Eating sushi with hands is refreshing. I am supper clumsy with chopsticks and can see myself looking like an idiot trying to eat sushi with chopsticks when I get there.
While I don't consider myself to be an "expert" with chopsticks, one thing that really helped my friends out when I showed them was to keep in mind that you only really move one of the chopsticks.
The other should just be pinched firmly on the tip of your middle finger and the webbing between your thumb and index finger.
You pinch the other chopstick between the tip of you thumb and indexfinger. And to move it up and down you kind of "roll" the chopstick between them using the index finger for motion.
So, as protein is digesting, it will actually spike your body temperature. Thats why you don't eat protein right before bed. But yeah, like throwing logs into a furnace, sushi may lower your body temperature momentarily, it will cause a subsequent spike in body temperature.
Just so you know.
As a texan I find this fascinating because depending on the part of the state you live in, fish is less accessible and more expensive, and sushi restaurants are more common towards the coast or in the chinatowns near Houston.
But I've been in the Panhandle for so long (600-700 miles away from the coast) that most Asian restaurants only have shrimp if they have fish at all.
The problem for some sushi restaurants in America is that they serve you soup first thing when you come in and take a seat
I love eating sushi and I am from Japan so I eat sushi with chopsticks. Eating sushi with your hands is fine too, especially the Gankan sushi. I find it very essential to eat sushi respectfully and also with eating manners too because the toppings on the top of the rice, I know that if you dip the rice part of the sushi into the soy sauce, the rice will become more absorbent by the soy sauce, my advice is to use the chopsticks and slightly tilt the sushi sideways and always dip the fish topping on the sushi or the nori side of the sushi, that way it will definitely taste more delicious than ever. I remember Shogo made a video about it too just how I explained it. Thank you so much for a great video Shogo!

I never knew that fact about the soup. I'll definitely start implementing this and see how that changes the meal for me. I'm also used to having sushi along with hibachi or something else but my husband and I have had just sushi dinners sometimes so I'll need to practice this more. Thank you
Your videos are really great fun! Thank you for all the work you put in. I live in Europe. In a Japanese restaurant, it was once explained to me that gari "cleans" the taste buds. So if you eat gari between the different sushis, every sushi tastes like your first bite and the flavours of the various sushis don't mix in your mouth. So I've tried that and found it to be true and delightful. You really can enjoy each specific flavour to the fullest. But I have to admit, I really like gari. Especially in winter, as it really raises your body temperature.
Eating sushi cured my depression. Thank you sushi.

Once again - so helpful - I am one of those people who doesn't eat a lot of fish just because of where I live so I have only had a few sushi experiences and your teaching style and information is so easy to understand. Doing things differently in different regions is something I noticed on my trip. Maybe not east/west but the escalators in Tokyo and Osaka are different sides. Very interesting.
Interesting about the soup serving is at the end of the meal. In the U.S. soup and salad are served at the beginning of the meal before the main course. Look forward to visiting and eating sushi in Japan one day, thanks for your informative and great videos!

I have a couple questions for you.
First I have seen so many different way to use wasabi but is there a traditional way using it in Japan that is acceptable? (I have seen some people put it directly on the sushi before dipping while others mix some with the soy before dipping)
Second is if one was to have sunomono would that be considered same as having a soup at the end of the meal or something to start with before the sushi meal itself?

I love the way this video is made, it feels like we're in a classroom and I love it! A bit of constructive feedback: the text is small and there's a lot of it, maybe dividing it in 5 slides would have made it look better and not that overwhelming.

I am lucky to live in a part of the usa with a large japanese population, and delicious sushi place nearby. I have not tried flipping the topping, I will try it next time ❤

I know that around Southern California, the rolled sushi pieces have avocado in them also.
I have a question. Being a person who has had a vertical gastric sleeve surgery, my stomach is EXTREMELY small and I can only eat very small bites; for instance, I would only comfortably be able to eat 1/2 a piece at a time vs. putting the entire piece in my mouth. Would this cause my sushi chef to think of me as an unschooled tourist, or would I cause him to lose face?

All of the Japanese restaurants I have been to in Australia none are exclusively sushi restaurants. They normally have Japanese Sushi Chefs but also serve a range of Japanese dishes. Miso and other soups are always in the entrée section of the menu to have before the meal not at the end here. The restaurants give each customer a hot damp hand towel to wipe their hands so they are clean to handle the sushi. All of the restaurants give the customer a choice for sushi, either a set order or what the customer prefers. It is not uncommon to order only tuna, prawn, and egg. As tuna seems to be the more expensive fish the sushi goes up in price. Then there are individual and franchise mainly sushi stores or kiosks in shopping malls. They are decked out in Japanese decorations and signs. They seem to be run by Thais, and Vietnamese and a curious practice is either to use up the tuna that has gone past its sushi use by date or to cater to those who can't face eating raw fish they have sushi with cooked tuna and other cooked items like prawns available. Most supermarkets stock a full range of S&B and other brands of Japanese sauces, curries, condiments, mirin, cooking sake, soy sauce, rice sushi vinegar, ginger, dried noodles, seaweed, sushi roll kits, Japanese sake, whiskey, beer, gin etc. The main problem is with wasabi it comes in a tube as a paste but it is made from Horseradish. There a specialty Japanese grocery stores and an online home delivery service that have a large range of Japanese seafood either frozen or preserved, plus a full range of other products. Australia has absorbed all of the Asian foods and either presented them unchanged or incorporated them in a unique Australian cuisine. That is one of the big differences between Japan which has a very high homogeneous population, while Australia has a multicultural population.

Coming from the SF Bay Area, sushi has been a mainstay in our family. However we've never been taught the culture of sushi eating. I've noticed what you say, insofar as temp increase etc and eating with fingers instead of chopsticks. Thank you for the info. Btw- I love, love rice balls!
I learned about #1 and #4 some time ago and it made a world of difference. In fact I recall a time before I knew about eating gari where I had all kinds of sushi, but on that day it felt like they all tasted the same.
Nice, after my grocery store sushi experience/disaster this is what I needed before getting some proper Sushi at a restaurant.
It is very funny, in Germany you mostly start a Dinner with a soup, not end it . I myself like eating Sushi with my hands more than eating them with chopsticks. And I like to Turn them over in my mouth too, because you can taste the difference between first tasting the fish or the rice. I myself like gari. I must admit, when I order sushi I ask for a bigger portion of ginger. 😁

Its interesting to me that soup is an end of meal thing in Japan, when here in my part of the US, soup (or a salad) are offered as an appetizer with the sushi set meals.
Not a perfect video to ask this, but Shogo your channel was the first to come to mind when my google search failed.
I lived in Japan for three years, and there were a handful of restaurants I visited during that time that served some sort of drink, I don't know if it's just considered flavored water, or Tea. but the key aspect of it, was it was tan in color, and usually was poured from a pitcher or cooler that had what looked to be a piece of wood in it. some of my acquaintances Here in the US didn't really think I was telling the truth or remembering correctly. Do you, or anyone looking at this comment know what it is I am talking about?

Although a quick question for eating sushi with your hands, is there a preferred hand (left or right) for handling it? I recall some cultures avoid using their left for handling food, is it the same in Japan?
Eating actually raises your body temperature it's the reason survival experts will recommend saving any food you have for right before you go to sleep because it will raise your temperature and make it less likely that you freeze to death.
I never knew in Puerto Rico 🇵🇷 we have a Kendo Club .
Where I live there aren't very man chances to use this knowledge..ma~ybe on the coast of my state as we do border the Atlantic Ocean and there are plenty of seafood joints on the coast..but inland where I live the only sushi to really eat are from international markets or a place like Kroger..which I consider dubious at best when it comes to that. There's a few places near me..but I'm not exactly big on fish to begin with..ironically enough. Though I am trying to get more into it as when I was younger I did enjoy it more. I do look forward to other videos like this though, the Kabuki and Noh mentions got my attention quite nicely as I do like how it looks and would love to know more. Same for the tea ceremony as there have been times in the past I've seen 'kits' that are for making green tea traditionally.

In California I have only had soup served at the Beginning of a sushi meal.
First time I was taken to a sushi restaurant where I live I didn't know what the gari was or for. I started to eat some and I can't say that I'm a fan myself of gari

Of course we cannot forget the most crucial aspect of eating sushi, the correct head tilt angle. It’s also an important to remember to mimic the actions of those around you to be extra creepy.

My mom really loves the gari.. Last time, she was just eating it as an appetiser, then she was a bit disgruntled that she couldn't order more (it was an automated serving place) ^_^' this was in our home country by the way.
The line and order of the set is similar to those on cheese boards found in Europe. (Light to dark, Left to right) And isn't Gari a palet cleanser* like Carbonated/Sparkling water we use in between courses over here in the West?
*According to a Sushi chef over here I frequent, otherwise the flavours would mix due to residue fat or such so you wouldn't be able to taste the individual pieces. (So sorry if that's what you meant by "Refreshment" )
