Bacon Wrapped Sausage Fatty - Keto / Carnivore

- I've been making bacon-wrapped sausage fatties in my smoker for years. You can fill them with just about anything you can imagine -- but usually it's a combination of cheese and meat, and maybe some veggies like peppers and onions.
For this video, I chose to bake the fatty in my oven -- since more people have ovens than have smokers and I wanted all my keto brothers and sisters to be able to make this.
NOTE: Especially if you are making this in an oven, you will want to use the thinnest bacon you can find, so that it fully cooks. In a smoker, where the bottom bacon and seam are exposed, it cooks nicely. If using an oven you may want to finish the fatty by broiling both the top and bottom. ALSO - this is not burnt, that's just the color from the BBQ rub.

I know this as a Bacon Explosion (all over google) and have made it several times over the years. It's always a hit. I have thought about making an Italian version using bulk Italian sausage instead of plain ground pork, then serving the sauce on the side but your pizza idea looks great. I also LOVE your handy method for flattening the pork inside the ziploc and it definitely made short work of rolling it up which was always a challenge for me. Great video, great recipe. TY

Looks similar to Bacon Explosion, but with more flavors and textures due the veggies you put in. I imagine this to be a quite
suitable variation, and I love the trick of how you used the bag to make the sausage 'patty'...

Hi Steve, I gave this one a try only to discover it was a bit TOO MUCH FAT (for me).
I made a second one with better, less fatty cuts of meats and it was perfect "for me".
One of the ways I ate the roll was to slice it thin and put it between a chaffle!
I'm going to pretend you didn't just say "TOO MUCH FAT". 😀 And that sandwich sounds dee-lish! 😋

Love the idea and I will have to try the armadillo eggs as jalapeño poppers are one of my secret keto snacks that go a long way toward staying on track. I would love to get one of your’breaking bad’ design tee shirts but there only seems to be small size available ( and even if I do keto for the next 10 years there is no way I will ever be that small again!) Will they have large sizes available in the future? By the way I also enjoy your many and varied tee shirts from your videos! Keep ‘em coming!

If you lay your plastic wrap onto a damp counter top the plastic wrap will lay flat and stick to it as you build your meat roll.

Yes, though it might be a bit overpowering. Perhaps a blend of 50% Italian Sausage, 50% ground sausage (or 70% lean beef) would be a good starting point. I just feel like if you did 100% Italian sausage, the fennel seed would be the dominant taste.
That makes sense...or even ground Italian sausage/ground turkey..

Oh my goodness! This is the stuff dreams are made of! I'm from England and get frustrated when certain ingredients are hard or impossible to get here without getting a second mortgage out but this.......this delight of magical meatery I CAN make! It has all my favourite things, meat, meat, meat, cheese, meat, meat,meat, onions marinara sauce and extra cheese and BACON! I never get hungry but this is making me drool! Best thing, even the carbonators in my home will love this as they love meat and cheese too! Not only is it a substantial and filling meal but be awesome for lunch boxes and picnics and is definately being added to my Christmas Eve menu and will make sure I can make another between boxing day (December 26th) and new year giving me new ways to use some turkey, or do two and serve one for New year's Eve! Yes!! Keto carnivore. Love it. Carnivore is such a healing diet put it can get boring sometimes. Thank you for this recipe.
Finally, had a chance to make this, and it was awesome! I had to quickly box up the extra to keep from eating too much. While you can play with meat substitutions ....don’t skip on the bacon weave and serious keto bbq rub as it takes this dish to another level. I smoke a lot of meat and I liked this cooked in the oven. I don’t know if I would like it smoked as it already has so many flavors melting together perfectly.
If you smoke it, you really need to use a mild wood (apple works pretty well) and not a lot of it. The sausage can REALLY absorb a lot of smoke.
Whoa Brother Steve! Best thing I've seen in a looooong time! I love the Scotch eggs ( boiled eggs) idea too I saw in the comments. I would love to see that made into a video! I can't wait to make this. I grind my own sausage ( hot sweet Italian, breakfast, brat, something with a weird name I can't pronounce) this recipe will be awesome for me. I'm so sick of my food right now. I've done a pork butt in the oven just like a smoker I loved! Mustard, dry rub, spray it, low and slow. That was fabulous also. This looks awesome! I'm going to try this as is asap because I know me and hubby will love it. I'm going to use it as a roast alternative too with a sage and onion stuffing because my son is still obsessed with pigs in blankets (in the UK they are just bacon wrapped sausages) and even now at 24 he'd rather have pigs in blankets than roast meat. Okay, your hack of using the Ziploc bag to roll out the meat is Genius!! I hate rolling things out because it gets messy and out of shape and never even, so the bag looks so easy! (Does it work for fathead dough? Testing time!)

I have a smoker but it’s still in the box 🤓🙈 I’ve had it for 4 years 😂 I bought it because of all the fabulous recipes from The BBQ Pit Boys. I’ve made plenty of their recipes and I can adapt them to keto as needed. Great job with this one, Steve. I’m definitely gonna try it at least in the oven for now 🤓

Made a breakfast version with scrambled eggs, cheese and salsa. Very good! And that got me thinking, have you ever had a Scotch Egg? Hard boiled egg wrapped in sausage, breaded and deep fried. This would be great stuffed with boiled eggs. Almost like a giant Scotch Egg.

So you got me thinking. What about a Thanksgiving one. I’m thinking ground turkey maybe with a stick of butter, then celery, onion, cranberries and apples. Wrapped in an Applewood smoked bacon. Happy Thanksgiving.
Actually, I did something similar last year for Thanksgiving (though it was not keto). It was basically a stuffed turkey Wellington, using transgultaminase (aka "protein glue") to make a big sheet of turkey breast. That's a pretty pricey ingredient though, so you're suggestion is probably better. 😀

I never even heard of this dish. What an interesting concept.That was a work of art and it looked delicious. I don't know why, but the basket weaving sort of confused me. I think I would mess that part up ! lol
It's not all that hard, just alternating layers. Works pretty quickly when you have two people doing it.

Just be aware that because of the fat content of sausage it is very sticky. I had tried the pat out and cut method with a ring cutter to make McGriddle sized sausage and it didn't work well. Whatever device you use to portion the sausage should get a good spritz of non-stick spray.

These things are awesome! We used to smoke them for hand out snacks when we doing competition bbq.
If you are a bologna fan try cutting 2"long pucks from a whole log of good bologna. Cris cross score it with a knife and apply your favorite rub. Now smoke it at 250f for about 2-3 hours over your favorite wood, I like oak or hickory. This stuff is addictive!
Real, thick cut bologna is so much awesomeness. Most people only think of Oscar Meyer and have nevery had excellent bologna from a deli log.

I'm making the fatty this morning. You make this look easy: mine however... I'll just say, it and I thus far have survived the experience. 😂 I'm letting it firm up in the fridge before putting the rub on then into the oven.
My first one was a hot mess. Delicious but not pretty. You’ll get better with experience.

So I made this this past weekend and OMG it's good. Made it with a pepperoni pizza stuffing and a bunch of fresh herbs. The one thing different was it took over two and a half hours to get the center to 170 degrees. I did use thick cut bacon so maybe that was a factor. Super delicious though. Thanks for this recipe!

I have a couple of requests. Ive subscribe to your channel. Can you try a pizza crust with lupin flour, and one with the bacon weave? Also, bread and butter gal on YT makes "egg pudding." Wonder if you can make a version. Looks like custard without the sugar.

Very off topic but just wanted to say I got Birch Benders Keto Pancake & waffle mix at Walmart yesterday.
Regarding hamburger, if you can get a fatty grind (like 70-75% lean) it should work. You may still want to mix an egg with it as a binder. On the subject of Birch Benders, was it the Paleo or the Keto version?
Remember when Epic Meal Time was like a huge controversy because of how much meat they were throwing in, and the fats, and stuff?

one thing I really miss is Ham and Cheese on Rye...would it be as simple as adding caraway seeds to the chaffle mixture, or sprinkled on top before closing the lid, similar to the way I have seen others use everything bagel seasoning?...or is there something else needed to get that rye bread taste?...any chance you might take a stab at creating something like that?

Smoke can really overpower this, since the sausage is so easy to penetrate. I usually use a lighter wood like apple when smoking these.
