IF YOU DON'T HAVE A SMOKER there are a couple of alternative ways to make these: On the grill - I'd set up a hot zone and a cool zone. Cook your "eggs" on the cool zone with the grill lid closed. You could probably put some smoker chips or powder in a pouch made from aluminum foil, set on the hot zone, to create smoke. If the internal temp of your grill is in the 400F range, the eggs should take 30-40 minutes to cook. In the oven - I'd line a baking sheet with foil (for easier cleanup) and then place a wire rack on top of that. Put the eggs on the rack and bake at 400F-425F for 30 minutes. If the bacon isn't crisp enough for you, you can turn on the broiler for a minute or two at the end.

These are soooo good. A friend of mine introduced me to these a few years ago. He would mix the sausage with chorizo and it was fabulous. When I make them my wife doesn't care much for chorizo so we make them like you do. We like to use Pepperjack cheese mixed in the cream cheese plus some crumbled bacon.
We made a version of these with Serrano peppers for my chilehead nephew and mild hatch for gringo me. Used the oven. They also make an awesome breakfast with a couple of eggs 🥚.
Awesome. We make 'em here in Texas all the time. Another good one is a Scotch Egg (soft-boiled egg covered in Italian sausage, covered in Pork Rinds then deep fried or baked) but use pork rind sub for bread crumbs.

My local BBQ has made something similar for a while now. They'll do core their jalapenos, stuff them with cream cheese and smoked brisket then wrap them in bacon. They call them Texas Twisters and they are the main draw. They're now served daily; used to only be on Fridays and Saturdays.
I heard of these first from the meat church bbq channel, a friend of mine showed me his video and made them. Slightly different in that he brushes them with bbq sauce after 90 minutes then puts them back in the smoker. They were really good.

I decided to grow 2 jalepeno plants this year...they are going crazy growing and I have already used quite a few for guacamole and I am fermenting 2 quarts of sliced jalepenos to use through winter...thank you for another great use for them!
I've seen armadillo eggs with avocado instead of jalapeno. I'm a hot pepper light weight so may do a couple with avocado for me and then jalapenos for my partner. :-). Thanks Steve!!

I don't do much grilling (and don't like smokey flavors) but I use this as a seasoning on all kinds of meats, in salad dressings, deviled eggs, etc. It's incredibly versatile. Looks good. I have been trying to go Keto for a year now. Always hit the same ruts. Single parent, don't have the ingredients or money to buy all of them, don't have the time. Maybe you can put together about 10 power keto meals, same 15 ingredients of food that can be made in 5 - 10 minutes prep time. I like bacon a lot.
New Year’s 🎉 dinner may have spawned some more armadillo egg makers! They were a hit, my son-in-law’s brother ate 3. He cooks. I’ll certainly make more of this tasty little guys.
I got a Traeger a year or two ago and have loved it...especially for Keto. I use Steve's BBG rub on a lot of meat in that thing! I'll have to try these as well.
